Hens are mature female chickens. Most chickens sold commercially are young and are not laying eggs as of yet. Older chickens are used for egg laying are called hens.

Once in a while you will see stewing hens in the grocery store. These are older chickens and the meat and skin tend to be tougher that's why you use them for stewing.

hens lay eggs and if they are ( trod on) by a rooster( this is how they mate ) the eggs become fertile and hatch out little chickens, one they grow up they are called hens, when you a roasting chicken from a supermarket it is a chicken which had been forced in growth to make it bigger for the food chain.
