It's currently a chilled block and I only want to defrost half of it.

Kinda late. Usually, when I get my groceries, I make a habit of separating and bagging my meats, etc just because I know that I probably won't be using all of it at one time. I do have a huge knife with jagged edges that I have used in the past to cut meats in half and return the portions I want to cook later to the freezer. Or, you can take your product to your local grocery store and your 'meat' man might cut it for you. They have the huge industrialized cutters. Good luck.

Take a sharp knife and cut it in half...then re-wrap the half you want to remain frozen and put it back in the freezer.

cut it in half with a knife especially made for cutting through frozen meats and voila

Yup, almost everyone is right....cut it in half and toss one back in the freezer and thaw one.
