Most single family houses especially in the South are constructed from Pine a Tree which is both Cheap, Plentiful and grows quickly.

When this started, wood was the easiest material to use. Even roofs were wood- shingles.
Now, there are materials far better than wood. Strawboard makes better walls. Styrofoam makes good insulation. Formed metal is better for framing. All are termite proof, which is a big advantage in many southern areas. And, all are renewable.
Simple answer, convenience.

Because when you take into account the materials, the experience of the workers, the availability of suppliers and wide selection of sizes of the material, its the cheapest.
That, and plus people just like doing it the same way they've BEEN doing it, both the builders and the home buyers.
I'm sure that once wood gets to be too expensive, that will start changing people's minds about how houses should be built. Especially when they see the other advantages regarding termites and fire danger.
