I want something nice but simple, preferably a chicken or veg dish. I am making carrott and corriander soup to start, what else can I pair that with? Thanks in advance!

If it was me, I would make roast beef and mashed potatoes, some veg on the side. For desert, maybe buy a pie like cherry or blueberry

This is a recipe for a chicken soup with asparagus and dill. It recieved great ratings.
14 cups chicken stock
8 fresh dill stems (stripped of leaves) plus 3 tablespoons chopped dill leaves
1 1/2 lb asparagus, trimmed and thinly sliced diagonally, leaving tips intact
3 cups frozen baby green peas (1 lb; not thawed)



Simmer stock with dill stems in a 4- to 5-quart saucepan, uncovered, until reduced to about 8 cups, 25 to 30 minutes. Discard dill stems. Add asparagus and peas, then bring to a boil, partially covered. Reduce heat and simmer, uncovered, until asparagus is crisp-tender, about 3 minutes. Stir in dill leaves and season with salt and pepper.

Makes about 13 cups.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Honey garlic baked chicken, au gratin potatoes and your soup should be nice. Don't forget to make a green salad, have dinner rolls and a good dessert.

make chicken and veg with rice.

microwave a couple of packets of rice and place into a big bowl, chop up the chicken and stirfry until cooked. then add some chopped up veg you like nice and colourful like red and orange peppers, peas, sweetcorn, red onions and mushrooms then mix it all into the rice. add soy sauce if you like.

looks good, its tasty, quick and filling

How about this asparagus lasagna. It's "dreamy good", and is prepared ahead of time so you can spend time with your company!

Asparagus pesto lasagna

1/3 C flour
3 ½ cups low-fat milk, divided
6T pesto, or more to taste
2T parmesan plus additional for garnish
1 tsp salt
¼ tsp pepper
2 tsp olive oil
1 ¼ lb asparagus, tips cut off and reserved, spears trimmed, and chopped into ¼ in pieces
1 clove garlic, minced
16 no-cook lasagna noodles (9 oz)
2 C shredded fontina or part-skim mozzarella cheese (8 oz) divided

1)Prehear oven to 350F. Whisk flour and ½ C milk in saucepan until smooth. Gradually whisk in remaining milk. Bring to boil over medium heat, whisking constantly, and boil 1 minute, or until thickened. Remove from heat and stir in pesto, parmesan, salt and pepper. Reserve 1 C white sauce.
2)Warm oil in pan and sauté chopped asparagus (not tips) and cook, stirring often, 5 minutes, or until tender. Add garlic and cook, stirring, 1 minute. Season to taste with salt and pepper. Remove from heat.
3)Coat 13x9 inch baking dish with cooking spray. Place layer of noodles in dish, overlapping slightly. Layer with half of cooked asparagus, ¾ C fontina, and half of sauce. Add another layer of pasta, remaining sauce, remaining asparagus and ¾ C Fontina. Top with layer of noodles, reserved 1 C white sauce. Arrange reserve asparagus tips over top and sprinkle with remaining fontina.
4)Bake, oncovered, 35 to 40 minutes or until golden. Let stand 10 minutes. Serve with additional grated parmesan cheese, if desired.

Down South it's black eyed peas, cabbage slaw or boiled cabbage and ham. I like to add sweet potatoes, rolls and iced tea.

A baked chicken is always good. You could serve it with baked potatoes!
