SLOW-COOKED BEEF STEW WITH SWEET POTATO AND THYME
Prep: 20 minutes // Cook: 6-8 Hours // Yield: 6 servings

2 ½ lbs beef chuck roast, in ¾” pieces
2 potatoes, in ¾” pieces
1 Sweet Potato, in ¾” pieces
1 Carrot, in ¾” pieces
1 Onion, chopped
1 can (28 oz) diced tomatoes
1 can (14 ½ oz) beef broth
2 Tbls quick-cooking tapioca
1 Tbl Worcestershire sauce
1 ½ teaspoons salt
Freshly ground pepper
4 sprigs fresh thyme
4 sprigs parsley
2 Bay leaves
1 Tbl chopped parsley
2 teaspoons fresh thyme leaves

1. Combine, beef, potatoes, garlic, sweet potato, carrot, onion, tomatoes, broth, Worcestershire, salt and pepper in a slow cooker.

2. Tie herb sprigs and bay leaves together with kitchen string. Add to slow cooker. Cook covered 6 hours on high setting or 8 hours on low setting. Remove tied herbs. Stir in chopped parsley and thyme leaves. Adjust seasoning if necessary.

Easiest Slow Cooker French Dip

3 pounds beef sirloin roast
1 (1 ounce) packet dry au jus mix
1 cup water
8 (1 ounce) slices provolone cheese
8 hoagie rolls, split lengthwise

DIRECTIONS:
Place the beef roast into a slow cooker. Stir together the water and au jus mix; pour over the roast. Cover and cook on Low for 6 to 8 hours. Remove the roast from the slow cooker and shred or slice. Open the hoagie rolls and top with beef and provolone cheese. Serve with small bowls of the hot au jus from the slow cooker.

I do the chicken taco thing too, but no sour cream. It's great. I also just throw a whole chicken in the slow cooker that has been seasoned with cajun seasoning and pour a little beer in the cavity of the bird, let it cook all day on low. Makes a great roast chicken.

I'd never thought of BBQ ribs in a slow cooker until we tried this. It works easier with boneless ribs.

1) Place ribs into cooker
2) Pour in your favorite sauce
3) Cook on high for an hour or so
4) Reduce to low & cook until done.

Simple but good!

Aunt Jenny's Slow-Cooker Meatballs:

1 1/2 pounds extra-lean ground beef
1 cup dry breadcrumbs
1/2 cup egg substitute
1/3 cup chopped fresh parsley
2 tablespoons minced fresh onion
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon lemon juice
1 (16-ounce) can jellied cranberry sauce
1 (12-ounce) bottle chili sauce
Parsley sprigs (optional)

Combine first 5 ingredients in a large bowl; shape mixture into 30 (1 1/2-inch) meatballs.

Combine ketchup, sugar, juice, and sauces in an electric slow cooker; gently stir in meatballs. Cover with lid; cook on low-heat setting for 8 to 10 hours. Garnish with parsley, if desired.

Yield: 10 servings (serving size: 3 meatballs and about 2 tablespoons sauce)

Pineapple BBQ Flank Steak

2 sweet potatoes, peeled and shredded (one med.,one large)
1 1/2 lbs flank steaks, well trimmed, cut into chunks
1 small onion, finely chopped (I used red)
1 (8 ounce) can crushed pineapple in juice
1/2 cup reduced-sodium chicken broth
1 1/4 teaspoons ground ginger (fresh is too strong)
1/2 cup barbecue sauce, sodium reduced
1/4 cup filtered water
1/4 tablespoon honey
2 1/2 teaspoons Dijon mustard (must be Dijon)
salt & pepper

Place shredded potato over botton of cooker.
Arrange meat on top.
Combine rest of ingredients and pour over meat.
Cover & cook on high 6-7 hours.

This is great if you like peppers!

iINGREDIENTS
1 (3 pound) beef chuck roast
4 cloves garlic, sliced
1 (16 ounce) jar pepperoncini
1 package Italian dressing seasoning mix

DIRECTIONS
Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
Cover, and cook on Low for 6

I serve this on hoagie rolls and put cheese on top and pop under the broiler til cheese is bubbly.

Slow-Cooker Chicken Cacciatore
1/4 cup KRAFT Zesty Italian Dressing
3 lb. chicken thighs and drumsticks
1/2 lb. fresh mushrooms (about 10 medium), sliced (about 2 cups)
1-1/2 cups coarsely chopped onions (about 1 medium)
1/2 cup each: red and green pepper strips
1 clove garlic, minced
1 can (14.5 oz.) crushed tomatoes
1 tsp. salt
1 tsp. dried thyme leaves
3 cups instant white rice, uncooked
HEAT dressing in large skillet on medium-high heat. Add chicken, in batches; cook 2 to 3 min. on each side or until browned on both sides.
PLACE mushrooms, onions, peppers and garlic in slow cooker; top with the chicken. Combine tomatoes, salt and thyme; pour over ingredients in slow cooker. Cover with lid. Cook on LOW for 6 to 8 hours (or on HIGH for 5 hours).
COOK rice as directed on package. Serve chicken mixture over the rice.
