If you place the avocado (or any fruit) in a paper bag with a ripening banana, the avocado will ripen as well. This is because the banana's ripening phermone is at work, and in an enclosed paper bag (not plastic), will also ripen any other fruit nearby.

If you buy an unripe avocado, it will ripen at room temperature over the course of a few days.
To speed up ripening, place the avocado in a brown paper bag. Store at warm room temperature for a day or two or until the avocado yields to gentle pressure from your hand. You can ripen a cut avocado this way too, but be sure to cover the cut surface closely with plastic wrap to prevent its turning brown.
Ripe avocados can be stored in the refrigerator for four or five days. Don't store unripe avocados in the refrigerator, they will never ripen properly afterward.
If you find yourself with too much ripe avocado, peel and pit the fruit and puree it with lemon or lime juice to prevent discoloration. Use about 2 tsps juice for each avocado. pack the puree into a covered container, label with the date, and freeze for up to four months.

*** Tip:The Toothpick Test: you can feel an avocado to see if it's ripe, but if you don't trust your touch, use a toothpick. Stick a pick into the stem end, and if it moves in and out with ease, the avocado is ripe and ready to eat.

Put them in a brown paper bag, fold over the top, and let them sit at room temp, like on the counter.
