Mexican Rice
2 tablespoons lard
1/2 cup ground pork
1/4 pound chorizo, halved lengthwise and cut into 1/4-inch pieces
1/2 cup chopped white onions
1/4 cup chopped green bell peppers
2 teaspoons minced garlic
2 cups long grain rice
1 large tomato, peeled, seeded and chopped
4 cups chicken stock, or water
3/4 teaspoon salt
1/2 teaspoon saffron
1 teaspoon chopped fresh oregano leaves
1 teaspoon chopped fresh cilantro leaves
1/4 cup chopped green onions
In a medium, heavy saucepan, heat the lard over medium-high heat. Add the pork and cook, stirring until no longer pink. Add the sausages and cook, stirring, for 1 minute. Add the onions and bell peppers, and cook, stirring, until soft, about 3 minutes. Add the garlic and cook for 30 seconds. Add the rice and cook, stirring, for 1 minute. Add the tomatoes and cook, stirring, for 1 minute. Add the stock, salt, and saffron, and stir well. Bring to a boil. Lower the heat to low, cover, and cook undisturbed until all the liquid is absorbed, about 20 minutes.
Remove from the heat and let sit, covered, for 10 minutes. Uncover and fluff the rice with a fork. Add the oregano and cilantro, and stir to incorporate.

Spanish Rice
Makes 4 servings
Ingredients:
2 tablespoons butter
2 tablespoons yellow onions, chopped
1 cup rice, white, long grain
1/2 cup tomato juice
1 cup water
2 chicken bouillon cubes
3 dashes bottled hot pepper sauce
2 teaspoons chili powder
1 pinch black pepper
1 Roma tomato, chopped
2 tablespoons red bell peppers, chopped
2 tablespoons green bell peppers, chopped
Preparation:
In a saucepan that has a tight fitting cover, melt the butter and sauté the onions until soft. Add the rice and stir to coat the rice with butter, then add the tomato juice, water, bouillon cubes, pepper sauce, chili powder, and black pepper.
Stir to dissolve the bouillon cubes and bring to a boil. Once the liquid reaches a boil, reduce heat to its lowest setting, cover, and go away for 25 minutes.
Do not stir, do not look under the lid, do not worry !!
Once your timer goes off, remove the pan from the heat, lift the lid off quickly and throw in the tomatoes, and chopped peppers and put the lid back on quickly.
Do not stir, do not taste, do not worry !! Allow the rice to steam in the pan for 20 more minutes.
Now... If you didn't cheat and if you didn't worry, your Spanish rice should be perfect. Stir in the tomatoes and peppers and serve with a smile. If you did cheat...Well, Shame on you !!!

i use this one myself, works greats for cooking itself as you are preparing the rest of the meal.
Spanish Rice Recipe
Ingredients:
12 inch frying pan, with tight fitting lid
2 cups long grain white rice
1/4 cup canola oil
1 yellow onion cut into 1 inch chunks
1 bell pepper any color, cut into 1 inch pieces
3 cloves of garlic, minced or 3 heaping tsp garlic powder
3/4 cup tomato puree
2 tsp sea salt
2 3/4 cups of chicken broth
3/4 cup of frozen peas
Directions:
Add the oil to the pan and put heat on to medium high. Add the rice and saute until golden brown approximately 10 - 15 minutes. Then add the onion and bell pepper and saute another 5 - 10 minutes.
The important thing is to make sure the rice is toasted to a nice golden brown.
Using a garlic press, add the minced fresh garlic by squeezing the press and cutting off the garlic as it comes out, with a knife.
Continue to saute for an additional 3 minutes. You will notice a wonderful garlic aroma.
Add the tomato puree, chicken broth and salt. Stir and turn heat up to high. Bring to a full boil while stirring. Continue to boil for 2 minutes. Reduce heat to low, cover and simmer for 20 minutes.
When it's done, turn off the heat, remove the lid and stir in the peas. Replace the lid and wait 5 minutes before serving.
You have just made some wonderfully flavorful spanish rice.

I like this recipe. Fresher tasting. Boil the rice with chicken broth instead of water. While it cooks, saute a small onion and 2 cloves smashed and diced garlic. Add 1 can chopped green chilies and 1 diced fresh tomato. When rice is ready, add to fry pan and salt and pepper to taste. You can add 1 teaspoon cumin, if you'd like. Mix well. Good topped with grated cheddar.

The easiest way to make it would be just adding tomato paste and with chili powder, garlic, and onion to the rice. you can get fancier with different meats or spices. Experiment. Or even easier yet...buy it at the market.

the easiest get some stewed tomatoes that are alreadt mexican flavoured and cook it up with rice takes no time or thought
