you know, they use egg to mear the patties before baking so that the outside stays nice and shiny. can I use anythig vegan for that?

Olive oil.

Also, egg washes usually aren't totally necessary for recipes. I usually skip it from sheer laziness.

Also, look into buying Egg Replacer for cooking and baking. It's a great vegan product available at most large grocery stores. Comes in an orange-yellow-brown box for about $4 and it'll last several years. It's WONDERFUL for baking and I believe it claims to work for egg wash, too.

What kind of patty? Would oil work for this particular patty?
