I lady walks into a super market and gets a litre of milk, a pound of ham, 1 bunch of banana, a half dozen eggs and a couple tins of cat food.

Technically, the person reading to or listening to the joke expects the counter guy to know she's single by the items she's bought...small quantities of everything and then, of course, the cat food. So it's kind of shocking/funny to have him say that she's single because she's ugly, because you're expecting something else.

I see ur point. This is not so good joke. But anyhow I will try to explain it to you.
The joke is in the last line.
Till then, the audience is anticipating some correlation between her shopping and her singleness. The last punchline creates joke by stating common-sense, instead of any logic derived from her shopping list.
Therefore, to make the joke more interesting, try making the shopping list as common as possible so that everyone thinks, this is so common, how would he able to know she's single!
