New York Cheesecake
INGREDIENTS
1 1/2 cups all-purpose flour
1/3 cup white sugar
1 egg, beaten
1/2 cup butter, softened
2 1/2 pounds cream cheese, softened
1 3/4 cups white sugar
3 tablespoons all-purpose flour
5 eggs
2 egg yolks
1/4 cup heavy whipping cream
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly coat a 10 inch springform pan with spray oil. Note: You could use a 9x13 inch pan instead.
To make the crust: Combine 1 1/2 cups flour, 1/3 cup sugar, 1 egg and 1/2 cup butter or margarine. Spread to the edges of the pan. Prick all over with a fork, then bake 15 minutes at 400 degrees F (200 degrees C). Allow to cool.
Increase oven temperature to 475 degrees F (245 degrees C). In a large bowl, combine cream cheese, 1 3/4 cups sugar, 3 tablespoons flour, 5 eggs and the yolks and mix thoroughly. Add cream and mix only enough to blend.
Pour filling over crust and bake for 10 minutes at 475 degrees F (245 degrees C). Reduce temperature to 200 degrees F (95 degrees C) and continue to bake for one hour. Turn oven off, but leave cake in for another hour. Don't worry if it looks a little jiggly in the center.
Chill overnight. This is imperative! If desired, top with your favorite fruit or serve plain.

I make this one all the time and I've had friends tell me that it is better than any they've had anywhere!
It's easy to make, but takes a long time to cook.
First, in a 10" springform pan:
Butter the bottom and sides and flower the bottom only.
Crush 2 cups of oreos, add 3/4 cube of melted butter and 1 tbs
of sugar. Mix, then press into bottom of pan. Bake at 400 for 10 minutes. Cool.
Mix the following until really smooth:
5 packages of cream cheese, softened
1/4 cup heavy cream
2 tbsp flour
5 eggs
2 egg yolks
1 3/4 cups sugar
Bake at 200 for 3 to 3 1/2 hours. When it looks set and is slightly brown around edges, turn oven off. Cool in oven for one hour, then move to refrigerator and chill at least 6 hours or overnight.
I usually add a chocolate topping on the side. Melt 1 cup of dark chocolate and 1 cup milk chocolate chips with a half cup heavy cream and a tbs of corn syrup. Spoon over individual pieces or pour over the whole cake and let it drip down the sides.

Shortbread crust:
# 1 1/4 cups all-purpose flour
# 1/3 cup sugar
# 1 teaspoon lemon zest, optional
# 1/4 teaspoon salt
# 8 tablespoons unsalted butter, softened and cut into 8 pieces
# 1 large egg yolk
# 1 egg white, beaten
Preheat oven to 400 degrees. Lightly grease a 9-inch springform pan. Whisk the dry ingredients together by hand or in a processor (process about 10 seconds). Mash in butter with fork or process until the mixture resembles coarse crumbs. Add egg yolk and mix or process just until the dough forms a ball.
Press about 1/3 of the dough evenly over the bottom of the pan. Prick dough all over with a fork. Bake until crust is lightly golden brown, about 10 to 15 minutes. Cool completely on rack. Press remaining dough around the sides of the pan, making sure that the dough is attached to the bottom crust. Brush the bottom and sides of the crust with the egg white. Refrigerate the crust until ready to use.
Filling:
# 2 1/2 pounds cream cheese (5 8-ounce packages)
# 1 3/4 cups granulated sugar
# 3 tablespoons all-purpose flour, optional
# 1 teaspoon grated lemon zest
# 1/2 teaspoon vanilla
# 5 large eggs
# 2 large egg yolks
# 1/2 cup heavy cream
Preheat oven to 500 degrees. Have all ingredients at room temperature.
Beat the cream cheese in a large bowl until creamy. Gradually add the sugar and flour; beat until smooth and creamy, scraping the beaters and sides of bowl, about 1 to 2 minutes. Beat in the lemon zest and vanilla. Beat in the eggs and yolks one at a time, just until incorporated, scraping the sides of the bowl and the beaters after each addition. On low speed, beat in the cream.
Scrape the batter into the crust and smooth the top. Bake for 15 minutes at 500 degrees. Reduce the oven temperature to 200 and bake for 1 hour more. Turn the oven off, prop the oven door open. Let the cake cool in oven for 30 minutes. Remove to a rack and let cool completely in the pan before unmolding. Cover and refrigerate for at least 6 hours, preferably 24 hours before serving.

15 graham crackers, crushed

4 (8 ounce) packages cream cheese

1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
