because there is no evidence he exists, there is no evidence that anything the bible says about him is true, there is no evidence that he created us, there is no evidence that he has any influence in our lives...should I go on?
The only things we know about him were written by people who thought that the world is flat, thought slavery is an acceptable practice, and thought women should be treated as less than equals to men.

Because when some people are told by another person; 'believe what I tell you is true - BUT -there's no evidence, nor is there any possible way to test whether what I say is true or not', some people are highly skeptical about that.
Add to that the fact that if you believe in this unprovable assertion they've made, then it means that you have to act a certain way.
Co-incidentally enough, those telling you what to believe happen to have a vested interest in you acting in this particular way.
Pretty soon it all starts sounding a heck of a lot like just a way for other people to make you act in a certain way and to do what they tell you to do.
I mean, really, if it made sense, I would believe in God, but there's NO evidence. Zero. Zilch. Given how wild and often ridiculous some of the other claims made by the religious are, it's much more likely that those who have provided us with tales of sure knowledge of the existence of God that ended up in the bible or other holy books were imagining thing or simply fabricating them.
And if weren't for the writing of people claiming to have revealed knowledge or conversations with God or his representatives on Earth, the profundity of religious texts would be largely restricted to family trees of who begat whom.

I do not know.
I find the bible to be so true that I can not prove one thing of it wrong, thare are a few man made errors, but easy to get it straight. Of O.T. 1,110 years and done 443 before Christ, and N.T. done 50 to 100 after Christ, and the world was not all organized until after KJV Bible 1611 after Christ was published in 303 years at 1914 after Christ it is and excepted translation by law of God and man, for the end time days of Satan.
Eph.2:7; 3:21; The world with Jesus is without end, John 3:16;

God has told us who do believe that there would be people who choose not to believe. Some people have just not discovered God yet.

Eventually ALL will believe as ALL will confess that Jesus is Lord. If one dies believing otherwise, they'll find out right away how woefully wrong they were. Hell has no exits or escape routes.

Lack of Evidence.
The better question would be "How could adults believe in a fairy tale?"
