Chef Rocco Dispirito's Mama's Meatballs
1/3 cup chicken stock
1/4 cup diced yellow onions
1 clove garlic, minced
1/4 cup fresh flat-leaf Italian parsley, chopped fine
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1/3 cup plain breadcrumbs
2 eggs
1/4 cup parmigiano-reggiano cheese, grated
1 teaspoon red pepper flakes
1 teaspoon salt
1/4 cup extra virgin olive oil
3-6 cups of your favorite marinara sauce
Place the chicken stock, onion, garlic, and parsley in a blender or food processor and puree.
In a large bowl, combine the pureed stock mix, meat, bread crumbs, egg, Parmigiano-Reggiano cheese, red pepper flakes, and salt.
Combine with hands until mixture is uniform, do not overmix.
Put a little olive oil on your hands and form mixture into balls a little larger than golf balls.
Pour about 1/2 inch of extra virgin olive oil in straight sided, 10-inch-wide saute pan and heat over medium-high flame.
Add the meatballs to the pan, working in batches if necessary, and brown meatballs, turning once.
This should take about 10-15 minutes.
While meatballs are browning, heat the marinara sauce in a large pot.
Transfer the meatballs to the pot with the marinara sauce and simmer for one hour.
Serve alone or over your favorite pasta.

Use whichever lean mince that you prefer, chop up an onion very finely also some garlic, parsley, salt and pepper and add to the meat.Add a few drops of Worcestershire sauce and an egg to bind it all together.Make into ball shapes and put on a baking tray and cook in the oven on a medium heat. Do NOT add oil to them before cooking as there is enough in the meat. I serve these with salsa sauce nice too.

Italian Meatballs

1-1/2 pounds lean ground sirloin or chuck
3/4 cup seasoned Italian breadcrumbs
1/2 cup grated Parmesan cheese
2 tablespoons fresh chopped Italian parsley
2 tablespoons fresh chopped basil or 1 tablespoon dried
1 tablespoon garlic powder
2 eggs, beaten
2 tablespoons milk

In a large bowl, separate the meat with a fork and make a well. In another bowl, mix the breadcrumbs with the cheese, parsley, basil, and garlic; set aside.

Beat the eggs with the milk and pour into the well. Using wet hands, knead the meat to absorb the liquid and mix in the double-seasoned breadcrumbs. Knead well, keeping your hands moist, until the meat is well mixed.

Scoop the meat out and then roll with your hands to form a nice ball, about golfball size. Place about 1 inch apart or less, on a non-stick baking pan and bake at 400 degrees until golden brown.

Baked Meatballs:

Make these ahead, then freeze them for superfast meatballs anytime. They're also great as appetizers and in sandwiches.

1 1/2 pounds ground beef
1 large egg, lightly beaten
3/4 cup quick-cooking oats, uncooked
3/4 cup milk
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 1/2 teaspoons paprika
1/2 teaspoon salt

Combine first 7 ingredients; shape into 1-inch balls.

Combine all-purpose flour, paprika, and salt. Gently roll meatballs in flour mixture, and place on a lightly greased rack in a foil-lined 13- x 9-inch pan.

Bake at 400° for 25 to 30 minutes. Drain on paper towels. Serve with your favorite sauce.

NOTE: To freeze, cool completely, and seal in an airtight container. To serve, place in a single layer on a baking sheet; bake at 400° for 10 to 15 minutes.

Yield: Makes 4 dozen

Spanish Meatballs With Wine Sauce Over Rice Recipe

Sauce:

1/4 cup olive oil
1/2 cup finely chopped onion
1 thinly sliced carrot
2 teaspoons flour
3 cups beef broth
2 tablespoons tomato sauce
1/2 cup dry white wine
salt

Meatballs:

3.5 oz bread, crusts removed (i used 1/3 of a 10oz canister of bread crumbs)
1/3 cup milk
1lb ground beef (or 1/2 ground pork, 1/2 ground beef)
1 tablespoon finely chopped parsley
2 cloves garlic, finely chopped
salt
2 eggs
flour for coating
olive oil for frying

Make the sauce first by heating the oil and frying the onion and carrot for about 10 minutes over low heat. Add the flour. When it browns, add the broth, tomato sauce and wine. Season with salt and cook over low heat for 20 minutes.

To make the meatballs, soak the bread in the milk, then press out the excess and mix with the meat, parsley and garlic. Season with salt, add the eggs and mix well to form a paste. Shape the meatballs with your hands, dip in flour, then transfer to a floured plate until they're all made.

Heat the oil in a deep skillet. Fry the meatballs a few at a time and transfer to a casserole as they finish. Put the sauce in a blender and puree. Pour over the meatballs and cook for 30 minutes over low heat.

While the meatballs simmer in the sauce cook some white rice. serve with lots of sauce over rice with a salad.

Sort of a pain to make them with kids running around, but if you make a ton of them they freeze really well.

Cocktail meatballs

2 lbs ground chuck
2 TBLS worchestire sauce
2 eggs well beaten
3 TBLS dried minced onion
1/2 c ketchup
1 cup cornflake crumbs
1 tsp pepper
1 tsp salt

Mix all ingredients very good (I use my hand to mix....you can use plastic glove). Shape into small balls and place on baking sheet. A broiler pan is perfect so juices can drain. Cook in 350 degree oven for 15 minutes. Place cooked meatballs in 9 x 13 dish. In a saucepan....Use 2 12 oz jars chili sauce and 18 oz grape jelly....Heat over med high heat, stirring until all signs of jelly melts. Pour over meatballs.....serve room temp or heat in oven on warm until ready to serve. Meatballs can be made ahead of time and frozen.....then you just have to make sauce and pour over and heat in oven. Very delicious!!!!!
