i alwalys get it at my favorite mexican resturant durangos, it is a chicken dish called pollo (something) adovo or adobo or something it is like a cheese soup with sour cream and bits of chicken in, it is very rich, so i belive it contains cream or something, with little bits of spinach cut up in it, and is served with flour tortillas i would really appreciate it if someone could find me a recipie, or even the real name so i can search for recipies online

Arroz con pollo

* 1/2 c Olive oil
* 1/4 c Tomato sauce
* 1 Frying chicken cut up
* 1/8 ts Saffron (powdered)
* 1 Small onion chopped
* 2 1/2 c Chicken broth
* 1 Clove garlic minced
* 1 c Uncooked rice
Salt and pepper to taste Heat oil brown chicken on both sides. Add onion and garlic fry a few minutes then add tomato sauce saffron dissolved in chicken broth salt and pepper. Cover and cook for 20 minutes. Add rice stir well cover again and simmer for 30 minutes longer or until all liquid has been absorbed and chicken is tender.

12 corn tortillas
2 cups shredded chicken
6 oz. chopped, roasted and skinned green chiles (fresh is best, but you can use canned in a pinch)
3 cups fresh spinach
1/2 cup chopped onion
1 cup crema or sour cream
4 oz. cotija, crumbled
5 oz. evaporated milk
15 oz green chile sauce
Warm oil to dip tortillas in
PREPARATION:
Heat oven to 350 degrees.
Heat 1 tablespoon oil in a pan over medium heat and cook the onions for about 1 minute. Add the spinach and cook it for about 5 minutes until leaves are wilted. Fold in the chicken and green chiles.
Set aside.
In a saucepan, heat creama, evaporated milk, cotija and chile sauce over low heat until sauce is smooth.

Prepare a 9x13 inch baking dish by coating the bottom with a thin layer of sauce. Dip a tortilla into the warm oil to soften it and place it into the pan. Place about 1/4 cup filling down the center of the the tortilla and sprinkle with a tablespoon of Asadero or Queso Quesadilla cheese. Roll the tortilla up and place seam side down in dish. Repeat until all tortillas are used.

Pour remaining sauce over the top, and sprinkle with the crumbled cotija. Bake dish for 15 minutes to melt the cheese.

Spinach Chicken Manicotti

Ingredients

8 uncooked manicotti shells
1/4 teaspoon salt
1/2 teaspoon black pepper, divided
12 ounces boneless skinless chicken breasts
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 container (16 ounces) fat-free cottage cheese
1/2 cup (2 ounces) crumbled blue cheese
4 cloves garlic, minced
1 can (14-1/2 ounces) no-salt-added spaghetti sauce, divided


Preparation :
1) Cook pasta according to package directions, omitting salt. Drain; set aside.

2) Meanwhile, fill medium saucepan with water. Add salt and 1/4 teaspoon pepper. Bring to a boil over high heat; add chicken. Reduce heat to medium; simmer, covered, about 30 minutes or until chicken is tender and no longer pink in center. Remove chicken from saucepan. Cool slightly; shred.

3) Preheat oven to 350°F. Spray 11X7-inch baking pan with nonstick cooking spray; set aside. Combine spinach, cottage cheese, blue cheese, garlic, remaining 1/4 teaspoon pepper and chicken in large bowl. Pour half the spaghetti sauce into bottom of prepared pan. Fill manicotti with chicken mixture; place in sauce in pan. Top with remaining spaghetti sauce. Bake, covered, 20 minutes or until heated through.
