1. Since he likes lettuce, you can introduce different salad greens. Look for an organic grocery and you can find several types of salad greens.
2. Since he likes carrots, you can introduce yams or other root vegetables in a soup.
Try to introduce organic fresh veggies - they taste way better. He is more likely to eat something that tastes good.

I would cook a big pot of vegetable soup for him. Put in mushrooms, peas, carrots, corn, cabbage, onions, tomatoes, spinach, etc. Give it lots of seasoning (maybe some garlic, cumin and pepper). See if he likes it.
If you want to add some beef or chicken, that might be even better.
A big pot of delicious soup is really good on a cold day. The key to liking vegetables is in how they are prepared.

the most important to cooking with a good number of vegetables is to season them nicely!!! With some exceptions, vegetables tend to be quite bland without seasoning.... i may even steam prepare dinner my vegetables and sprinkle em with some "Montreal steak" seasoning and make it flavor great! Or make a soup the position you may want to mix your vegetables: SHRIMP - VEGETABLE BISQUE 3 a million/2 c. (about a million lb.) zucchini, sliced a million c. carrots, sliced a million/2 c. celery, chopped a million/2 c. eco-friendly onion, sliced a million/2 c. butter a million tbsp. flour a million 3/4 c. milk 2 c. water a million can cream of mushroom soup a million/2 c. dry white wine (or improve water by 1 million/2 c.) a million/2 c. bitter cream 2 tsp. fowl bouillon granules a million (4 a million/2 oz.) can tiny shrimp In coated Dutch oven, prepare dinner zucchini, carrots, celery and onion in butter till gentle, about 20 minutes. mix in flour. Stir in milk. prepare dinner and stir till bubbly. Pour into blender, hide and combine till gentle. In same pan combine water, soup, wine, bitter cream and bouillon granules. Then stir contained in the puree and shrimp. warmth by, yet do not BOIL. Garnish with cucumber slices. Makes 8 (a million cup) servings.
