We are having a party on Jan. 1st and have about 7 dozen tamales to reheat. I need to know the BEST way to reheat as I do not want dry, tough tamales. Thanks....

If you want to use the oven to re-heat the tamales, try placing a small pan of hot water in the oven to provide steam & put them in a tray covered with foil to keep them moist. Pre-heat the oven to about 350 degrees F with the pan of hot water in the lower rack towards the back of the oven. Only fill the pan to about 1/3 so it doesn't slosh over. Place the tamales in single layers on 1-2 trays, spritz with a bit of water, and cover with foil. The amount of time depends on the size of the tamales. Check on them after about 15 minutes to get an idea of how they are progressing.

I think the best way to reheat tamales is to steam them. Since you have a lot of tamales, it may be worth your while to get a large pot with a steamer basket. You can use the pot by itself for stock, tomato sauce, etc. and the the steamer basket is handy for steaming vegetables. (Pasta baskets are not very versatile but you can try it for steaming the tamales in batches if you have one.)

Another option is to get a Chinese steamer - they are usually made of aluminum and come w/ 2 tiers of steaming trays.

If you have a large wok, you can also get bamboo steaming baskets (the kind used for dim sum). Just fill the bottom of the wok with water, place chop sticks in a grid pattern & rest the baskets on top of the grid.

Yes, you can heat them in the oven, but you risk drying them out - and anyone who knows tamales knows you can't mess with the masa!

I would suggest steaming them if you have a steam basket (like the ones you use for veggies) its the saftest route - although it does take a bit longer than a micro.

You can either steam them either on the stove or in a crock pot or if you want to do the whole 7 dozen at one time - I would use one of those plug in turkey roasters - put the bottom rack in place and pour your water in the bottom (below the level of the rack) and then just place your tamales on top of the rack, close the lid and voila - hot tamales!

Hope you are serving them with Green and Red sauces both!

I strongly suggest you do not put it in the microwave, and I'm glad you do not want to do that. You should most definetely reheat them in an oven, preferably on cookie sheets.

trying warming them in the oven on a higher rack and below that rack put a big pan full of water to steam while re-heating the tamales!

you can place them in a small amount of water in a large skillet or baking dish and reheat either on stove top or in oven. If you have a steamer that will work best.
