My wife is almost done cooking the brisket and now we need to know how to cut it properly for serving.

When you've taken it out of the oven, place it on a cutting board and let it "rest" for about 10-15 minutes.
This is so the meat absorbs the juices and won't run out when you cut it...across the grain.

With the grain, at a 45 degree angle. Yum!

Cut it directly across the Grain. This will help it be the most tender and not be stringy...

Thinly sliced, against the grain & with plenty of au jus on the side......We do this about once a month on our smoker & LOVE it!!

Slice it thin against the grain. If you slice it with the grain it will fall apart,
