i would say, when my hubby came home from iraq, my mother in law made gorditas, fresh flour tortillas with beef and potato, rice, fresh drunken beans with homemade salsa's. that woman can cook...i love everything she made.

Carnitas at Don Pedro's on South 18th street in Chicago. Absolutly amazing. The lines on Sunday Mornings go out the door after 9 AM because of people going there for take out for their Sunday dinners. Don Pedro is a legend.

Fresh caught Tuna and Mahi-Mahi done two ways. For appetizers we had the Tuna as sushi and the Mahi as serviche. Then for our main course we had Broiled Tuna with fried Plantain and roasted Mahi-Mahi in a Tomato Jalapeno sauce served over rice overlooking the Sea of Cortez in San Jose del Cabo, Mexico.

A real seafood enchilada with cream sauce, and sides of real refried beans, rice, salad, guac and sour cream. And it was at a real Mexican place and was only $12 bucks. I ate the leftover for 3 days. The plate was really that huge.

I make mean Tacos...Med.spicy meat sauce on Taco chips, with rice, refried beans, lettuce or sprouts, fresh tomatoes, mixed jack/cheddar cheese, guacamole, sour cream, sliced mushrooms, taco sauce, salsa, nacho cheese sauce.
All from scratch and delicious!!! Make this for my sons when they get home from college and have friends come over....They clean out all the dishes and go away full!!!! They always ask to come over when MOM is making this delight!!!!

tine little carnitas tacos I got in Nogales Mexico. Yum! Or the Torta i got in baja when I was kid, it was the first mexican food I had eaten outside of taco bell, i didn't know it was that good.
