I have been trying to think of different theme and different type of buffet to set up?????????

Sounds like a laid-back party, so costumes would be probably out. For the noise level, either a CD that everyone likes, or the TV countdown, or a movie that everyone knows so they don't get caught up in trying to figure out the plot. Or even the radio.

If you'll be playing cards, finger foods are a must. Drag out all the old dishes and platters for the presentation. Trivial Pursuit or Pictionary is fun. Maybe buy a few cheap baubles for winners. Another fun one is have everyone wear a jingle bell around their neck, and nobody can say a certain word, like "orange" or "green" or something. During the course of the night you try to ask the person with a bell a question that will make them say the word without thinking. If they say it, then you get the bell. Person with the most bells at the end of the night wins the prize.

Make it fun, play silly games, have some bubbly, and laugh a lot!

people love food so don't be too worried about the food
I had bacon wrapped water chestnuts and bacon wrapped scallops this year and they were great, mini quiches would be nice, veg and dip tray, chicken wings are popular

movies: When Harry Met Sally is good because it ends at New Year's Eve

for games: the game Cranium is FANTASTIC!

Tell everyone they have to dress in costume, either father time ( the old year) or baby in diaper (the new Year). It will be interesting to see who wears which outfit.
