Stuffed mushrooms,
Brown some sausage, chop it in a food processor, chop up stems, 1 small clove garlic chopped, mix in cream cheese
stuff in mushroom caps add a little garlic salt bake @ 350 for 20-30 minutes

People love them (even without sausage) they are really easy.

Easy Guacamole Recipe

2 ripe avocados

1 small onion

1 clove garlic

1 small tomato

1 1/2 Tbsp lime juice (or juice of 1 fresh lime)

salt and pepper to taste

Peel avocados and remove the pit (see below for a neat idea on how to use the pits)
Peel and mince the onion and the garlic
Chop the tomato.
Mash the avocado in a bowl (fun for the kids) and then stir in the remaining ingredients.
Serve cold with tortillas

This is going to sound weird by I have been making these little treats call Atomic Buffalo Turds. I found them on a site called The Smoke Ring. You can make them indoors easily:

Start with about 20 of the largest Jalapenos you can find. Cut them in half lengthwise, and take out the seeds and white pith (that's where most of the heat is) to form little canoes.

Fill them with a well-mixed mixture of cream cheese mixed with seasoned ground meat, a little liquid smoke and any other spices you may prefer. Once I made them by grinding up some of those L'il Smokies suasages.

After they're filled, put a slice of smoked, thick-sliced bacon over the top and put them in the oven, on a rack over a tray, at 325 until the bacon is done, about 25-30 minutes. Let them sit for just a bit until the bacon crisps. They're really good.

HOT CRACKERS -
Here is the recipe:
1 pound box crackers [cheapies ok]
1 1/3 cups Canola Oil { Wesson and other oils dont work]
1 pkg Hidden Valley Ranch Dressing mix
1 - 3 tablespoons red pepper [some brands of pepper are different in hotness. I use ground red pepper. Cayenne is hotter. 1 Tbs would suffice unless you like them quite hot. Remember what you do, and adjust it on the second batch. ]

Arrange crackers on edge in container with a tight fitting lid.[Sterlite has one that holds a box). Got it at the dollar store. It is Number 5. Container needs to be small enough so crackers stay on edge.]
Mix oil and seasonings together very well. Pour over crackers. Let set a minute or two, then invert container. Let set another few minutes and invert again

I "concocted" this hors d'ouerve/appetizer about a month ago, and it was a hit (plus, no one ended up in the emergency room!).

Ingredients:

Bag of Tostitos "Scoops" variety
One pound of chopped meat
One small jar of mild salsa
One 8 oz. bag of shredded cheddar cheese

Instructions:

1. Lay the as many Scoops as you can/need (open "bowl" side up) out on a decent-sized cooking tray. Preheat oven to 350 degrees.

2. Next, mix the pound of chopped meat with the small jar of mild salsa. In skillet, cook meat mix until fully cooked (no raw pieces!).

3. Use a small spoon (i.e. parfait spoon) that is easy to remove meat mixture from the skillet and place a small amount just enough to fill each Tostito Scoop.

4. Sprinkle shredded cheddar cheese on top of each Scoop and heat in preheated 350 degree oven for about 5 - 10 minutes, or until the cheese topping has melted.

I remember I was able to make about 50 Scoops, but feel free to do more if you're having a large crowd (adjust ingredients accordingly). My guests loved them since they were delicious and easy to pop in their mouths. And, for me, it was also easy -- took about 15 minutes at the most to make them.

SALAMI-ONION WRAPS

Ingredients:
3 bunches of green onions
1 package cream cheese
1 package salami - round pieces

Preparation:
Wash and peel onions as needed. Trim to about 6" in length.
Smear a bit of cream cheese on a slice of salami and place an onion in the middle with some of the white sticking out at the bottom. Roll the salami around the onion to make a little wrap. Make sure there is enough cream cheese on the salami to make the ends stick together.

I know this sounds a little weird, but I have made them for parties and everyone LOVES them! Very flavorful and super easy to make. Enjoy!

Some great easy appetizers for New Years are the classic, crackers and cheese, little smokeys, and shrimp with coctail sauce!Or go to Cosco or Walmart to get some appetizers.

BEST APPETIZER EVER!!

Club Sandwich Rounds

1 pkg thinly sliced roasted turkey deli meat (8-10 oz)
8 oz shredded cheddar and jack cheese (pre-packaged)
1 small pkg bacon crumbles (in the salad section)
mayonaisse
French Bread Baquettes
cherry tomatos
Shredded parmesan

Chop the lunchmeat finely. Add shredded cheese, crumbled bacon and chives. Use enough mayonaisse to bind the ingredients together so they're spreadable, usually about 1/2 cup. Slice the french bread baquettes into 1/4 inch slices. Spread each slice generously with the cheese/turkey mixture, top with a thin half-slice of cherry tomato. Place closely together on cookie sheet and broil until cheese is thoroughly melted and slightly browned on top. Remove from oven. Lightly sprinkle shredded parmesan on top. Remove and serve warm.

My favorite easy thing is a cube of cream cheese, a really good jalapeno jelly or some kind of spicy jelly (red pepper jelly, ancho chili jelly) and triscuts. You just put the cream cheese on a plate, pour over the jelly and surround with triscuts. You can also do this with cream cheese, cocktail sauce and baby shrimp or crab meat.

For a last resort there is a really nice "tort" at Trader Joes that has pesto, sun dried tomatoes, and cream cheese. It comes in a jello mold shaped container so when you flip it over on to the plate it is beautiful. You can surround with triscuts and almost pass it off as your own. I always get millions of compliments and the plate gets cleaned.

I make "southwest egg rolls" like they serve at Chili's. You can get the real recipe at topsecretrecipies.com for like $0.79, but here is what I use:

3 good sized boneless, skinless chicken breasts
1 15oz can black beans drained and rinsed
1 15 oz can of yellow corn drained and rinsed
1 small package of froze chopped spinach thawed and as much water as you can squeezed out
1 Tbl spoon canned chopped jalapenos
1/2 pound jack cheese shredded
1 package fajita size tortillas (mission low carb are the best because they are the softest and eisest to work with, but any will due)

Cut the chicken into small pieces (about 1-3/4 in cubeish) and cook in about 1tbl spoon oil. A non-stick skillet works best. When the chicken is cooked add the beans, corn, spinach, and jalapenos. Cook on medium heat until the mixture is heated through. Take the pan off the heat and add the shredded cheese and mix to combine until all the cheese is melted. Set this aside to cool for a few minutes.

While the filling cools, get out your tortillas and open them. Place a damp paper towle inside and heat in the microwave for 30 seconds. pull them out of the microwave and fill.

To fill place about a soup spoons worth of filling in one third and roll up tucking in the ends as you go, so you have a little burrito.

Place all your rolls on a cookie sheet and freez them. To cook you can do one of two things: 1) fry them in 350 degree oil or 2) brush a little oil on them and bake them in a 400 degree oven. The oven will take about 20-30 min to get them good and chrispy, but you can walk away and do something else for a few minutes while getting ready for the party.

When they are done, cut in half into "triangles" and serve filling side up around a bowl of the dip below

And lastly, the Avacado Ranch dip

1 packet ranch dressing mix prepared
1 avacado seeded and pealed
Mix

I usually put the ranch mix and everything you need to make it dressing in a blender with the avacado and mix it all up that way.
