We're having a bufet on New Years Eve and plan on keeping it out for a long time. How can we safely put potato salad out for 5 hours? Put one bowl in another bowl of ice or what? How well does herring keep (both wine and sour cream).

The bowl of ice is obviously the best solution. However, if you put it in the freezer for 30 minutes prior to serving, and get it super cold, but not frozen, it will stay cold even longer.

I would say keep it in a large bowl of ice or a cooler.Good luck and Happy New Year!

You answered you own ? Just be sure to check the ice every couple of hours and make sure its still ice and not ice water. The herring will be ok for a couple of hours.

Definitely keep it on ice, because that mayo and onion can make everyone sick and that would not be a good way to bring in the new year.
