Almost anything that I used to eat, minus the meat. Pizza, soups, lasagna, quiche, pasta, stir fry, etc. -- all those things can be made without meat and still taste good. I either use meat substitutes or just leave the meat out altogether.

I've also branched out and am doing a lot more vegetarian casseroles and meatless entrees. I bought a bunch of vegetarian cookbooks over the last six months and am having a blast trying new recipes.

As to why I don't eat meat, I literally woke up one morning and couldn't stand the smell or the taste any more. I have no idea of what triggered the change, but it's been a healthy one for me. And it's made cooking a lot more fun than the same old "meat and potatoes" rut that I was stuck in before.

Instead of meat, I choose nuts, soy, dairy, and beans for my protein. I try to get my iron from all sorts of foods--everything from spinach to cereal. I love veggie burgers, but not the meat imitation kind. I dress black bean burgers up with salsa, cheese, and corn...very delicious! There are a lot of different kinds of foods out there. I like to try new things, but I also like to change old favorites--for an easy meal, I just embellish whole wheat pasta with something interesting like olives or artichokes.
Being a vegetarian is something that makes me unique, but I stopped eating meat because I just couldnt stand the thought of it. Once I started thinking about the animals, it just got to me...

Well, I hope that answered your question!

A lot of people think vegetarian automatically means "healthy". Not necessarily true. I'm no saint when it comes to eating right. It's easy to overeat carbs (pasta, bread, sweets) because they are so easy to get to! Some people think all I eat are vegetables...not true. For me, vegetarianism is simply eliminating meat, poultry, fish, etc. because it just started grossing me out. I eat anything else that I want. Try to get protein from other sources and do the best I can balancing the food groups.

I became a vegetarian at the age of 3, when a family friend told me about abattoirs.
Some friend huh?
Anyway, instead of mince in lasagne, I use fried zucchini and mushrooms. Lots of mushrooms. Yum.
Also, in canneloni I have spinach and cottage cheese.
When the rest of the family have a barbecue, I have eggplant and potato.
I have a lot of tofu or chickpea patties. In Australia they are made by a company called Sanitarium. If I am invited to a meal at someones house, I usually take one of these with me and have it with the vegetables or salad, when everyone else is having chicken or steak.
I have a lot of quiches and eggs too.
Pizza with antipasto.

I became a vegetarian because I don't feel it's right to kill animals for food resources. I've grown up with animals my whole life and love them way too much to eat them.

I eat TONS of pasta, I can't get enough of it. Cheese pizza is still good enough for me :D I also like veggie brands such as: Morning Star Farms, Amys, and Quorn. I can't stand Boca, the flavor isn't good IMO.

I don`t replace meat with anything, I just took it out for good from my daily menu and I honestly don`t miss it (almost 8 years already).

I chose to give up meat because... oh well, you know how the "steaks" are prepared... kill an innocent animal... cut it in small pieces... lots of violence for nothing. That`s a thought I just couldn`t live with.

All the mock meats are heavily processed and expensive. I eat a lot of beans and nuts, much cheaper. And as far as why I eat that way: Because my body is not a graveyard.

I avoid mock meat since there's a lot of processing that goes into it. Beans, nuts, and tofu for protein. Italian, Indian, Chinese and Greek cuisine offer tons of vegetarian selections. Soups, salads and stuffed baked potatoes are among my favorite lunch choices.

brown rice, legumes, beans, fruits, veggies, boca burgers, soy milk/ almond milk, salads, whole grain vegan bread, amy's frozen meals and amy's soups. umm juice... vitamins. lol. um and im vegan by the way, so this is a bit more restricted than veggie. i do this because the thought of eating another animals muscle completely grosses me out and i dont like the entire industry that is associated with animal products. its horrible conditions, the animals have such sad lives to lead. they get born and they die. and the milk industry reminds me too much of puppy mills. they just keep giving birth to produce milk until they cant any more. once we needed other animals to live, but taking their lives are no longer necessary and i dont want to support that.
