I received a shipment of Mangos (mangoes) from Ecuador. They are unripe. I can make Thai green mango salad or ripen them. How is the best way to ripen them?

Selecting the ripeness of mangos can be determined by either smelling or squeezing. A ripe mango will have a full, fruity aroma emitting from the stem end. Mangos can be considered ready to eat when slightly soft to the touch and yielding to gentle pressure, like a ripe peach. The best flavored fruit have a yellow tinge when ripe; however, color may be red, yellow, green, orange or any combination. The ideal post harvest storage temperature for mangos is 55º F. When stored properly a mango should have a shelf life of 1 to 2 weeks. It has been found that the best way to ripen a mango is at room temperature, on the kitchen counter and if you wish to accelerate the process place in a paper bag overnight (some people place an apple with the mango in the bag to create more natural ethylene gas and further decrease the ripening time). Once ripened the mango can be refrigerated for a few days, but should be used shortly thereafter.

Since you have a lot of them I'd put some out on the counter, some in a paper bag and then some in a paper bag with an apple. That way they won't all ripen at the same time. The reason for the apple is to add more natural ethylene gas, which speeds up ripening.

The brown paper bag in a dark corner works for a few, but if you have a large number and want them to ripen faster, do the same as bananas, if you put a ripe banana with green ones, it speeds up the ripening process, the same with mangoes. You can than ripen the as you need them.

In India we put them in a tin of rice. But if you dont want them to ripen all at once, then put some in and leave the others out.

leave them to sit on the counter, they will continue to ripen. or to ripen them quickly, put them inside of a paper bag. Once they are ripe, store them in the refrigerator.

Put them in a paper bag and leave them on your counter for a day or two or till they have ripened enough for you.
