Curried Cumin Potatoes

INGREDIENTS
2 pounds new potatoes, cut into 1/4 inch thick pieces
2 tablespoons olive oil
2 tablespoons cumin seed
2 teaspoons ground turmeric
2 teaspoons curry powder
2 teaspoons coarse sea salt
1 teaspoon ground black pepper
3 tablespoons chopped fresh cilantro

DIRECTIONS
Place whole potatoes into a saucepan with water to cover. Bring to a boil, and cook until just tender. Drain, and cut potatoes into quarters. Set aside to keep warm.
Heat oil in a large saute pan over medium-high heat. Saute the cumin, turmeric, and curry powder for 1 minute. Add potatoes, and saute until toasted. Toss potatoes with sea salt, pepper and fresh cilantro, and serve hot.

Indian Curried Potatoes Recipe


Ingredients:

3 tablespoons sunflower oil
1 teaspoon mustard seeds
1 pinch ground cumin
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon garam masala
1 teaspoon chilli powder
1 knob fresh ginger, peeled and grated
6 potatoes, peeled, parboiled and cut into cubes
4 knobs butter
4 tomatoes, cores removed and flesh diced
1 handful fresh coriander, roughly chopped


Directions:

Heat the oil in a pan and fry the spices for a few minutes. Add the butter, then the potatoes making sure they are completely coated in the spicy mixture. Cook for about 10-15 minutes, then stir in the tomatoes and the coriander.

2 lb potatoes, washed, peeled, cut in 1 inch dice
1 large white onion, washed, peeled, chopped
2 cloves garlic, washed, peeled, minced
1 inch fresh ginger, washed, peeled, minced
1 hot pepper, washed, minced (optional)
1 tablespoon curry powder (your favorite, of course)
1 tablespoon soy sauce (I prefer low sodium organic tamari)
1 tablespoon toasted sesame oil
1 can coconut milk

Preheat oven to 350 degrees.

Prepare all ingredients. Toss together in large casserole dish. Cover and bake for about 1 hour, until vegetables are tender.

For variety, reduce the amount of potato and add carrots, peas, celery, sweet peppers, basil, or eggplant -- singly or in any combination. You can also use sweet potatoes instead of potatoes. Or try winter squash.
