Well A vegetable tray is easy you can make one yourself, or go buy one at your grocery store. Chips&Dip are so easy it's not funny and it would be a cheap snack. Finger sandwhiches would be sorta easy and take about 20 or 30 minutes just take a normal loaf of bread and put like 3-5 slices of bread on top of each other at a time and cut them and put meat in em and cheese and put a tooth pick in the middle and put em on a tray. Also A Shrimp cocktail would be good too if they like shrimp thats simple just buy pre-cooked shrimp and you can buy the sauce or make it your self. Happy New Year :)

My favorite one was from my dad.
He takes a tube of sausage - mild Bob Evans and cuts half a block of Velveeta. Brown the sausage until cooked and add the cheese to the meat. Take the small rye bread loaf - the ones that are made specifically for making an hor dourve. They're usually at the grocery store deli. Put a spoonful of the meat cheese mixture on the bread and put it in the oven for 20 minutes on 350.
They are really good. Or you can make a tortilla chip dip with salsa or Rotel and velveeta with sausage, turkey or ground beef. This is always good because you can put it in a small crock pot and go.
You could also buy a small fondue set with a burner and place pretzels and fruit next to it with melted chocolate. The last two suggestions you can prep and then walk away from and not have to worry about them.

Artichoke and Spinach Swirls
Ingredients:
1 pkg. (17.3 oz.) Pepperidge Farm® Frozen Puff Pastry Sheets (2 sheets)
1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. ground black pepper
1 pkg. (10 oz.) frozen chopped spinach, thawed and well drained
1 can (14 oz.) artichoke hearts, drained and chopped
Directions:
1. Thaw the pastry sheets at room temperature for 40 minutes or until they’re easy to handle. Heat the oven to 400°F. Line a baking sheet with parchment paper.
2. Stir the mayonnaise, cheese, onion powder, garlic powder, black pepper, spinach and artichokes in a small bowl until the ingredients are mixed.
3. Unfold 1 pastry sheet on a lightly floured surface. With the short side facing you, spread half of the spinach mixture on the pastry to within 1-inch of the edges. Starting at the short sides, roll up like a jelly roll. Repeat with remaining pastry sheet and spinach mixture.
4. Cut each roll into 20 (1/2-inch) slices. Place 2 inches apart on prepared baking sheets.
5. Bake for 15 minutes or until golden. Remove from the baking sheet and cool slightly on a wire rack. Serve warm or at room temperature. Makes 40 pastries.

I have this recipe for Ham Roll Ups. This recipe is great because it makes plenty so you will be good for the entire night & you can make the night before so you dont have to spend the evening in the kitchen.
Ingredients:
8oz. softened cream cheese
1 envelope of dry ranch dressing mix
1 bunch of green onions, chopped
2 pkgs. of 8-10 inch tortillas
1 lb. of thinly sliced ham
Combine cream cheese, dressing mix, & green onions. Spoon 1 tbsp. of cream cheese mixture onto a tortilla & spread evenly. Put one slice of ham on top of cream cheese & roll up. Repeat until you have used all of the tortillas. Refrigerate overnight and then before serving slice into serving size pinwheels. ENJOY

I make these at Christmas to snack on while opening gifts:
Recipe can easily be doubled or tripled if needed..can be rolled ahead of time and popped in the oven just before guests arrive and easy clean up too.
Bacon wrapped Water Chestnuts:
1 pound bacon cut in half
2 cans water chestnuts (whole or sliced)
1 bottle of terriyaki sauce
toothpicks
pre-heat oven to 350
open and drain water chestnuts place in small bowl
pour terriyaki sauce over water chestnuts just enough to cover
let marinate for about 1-2 hours in refrigerator
after marinated wrap one slice of bacon around one whole chestnut (or 2 if sliced chestnuts)
hold bacon in place with a toothpick
place on baking sheet and bake in heated oven until bacon is crispy
I place cooked pieces on a plate covered in a paper towel to absorb some of the bacon grease and serve warm!

These are a tradition in our family for a simple hot hor's doeuvre. You can make them ahead and just pop in the oven before serving.
1 pkg. little smokies or other little tiny weinies
1 pkg. bacon (I buy good bacon)
brown sugar
toothpicks (round)
Cut bacon slices in thirds or quarters. Wrap smokies in bacon and skewer with toothpick to hold. At this point, you can refrigerate them until needed.
cover cookie sheet with aluminum foil. Place weinies/smokies on cookie sheet and sprinkle lightly with brown sugar over all. Bake at 350 until browned and bocon is done...about 20-30 minutes.

take ho dogs and cut them into five pieces. wrap each piece with a third of a slice of bacon. put one layer in a 9x13 pan, put a layer of brown sugar over the top, take another layer and put on top of that and then another layer of brown sugar. Cover tightly with foil and bake at 350 for 45 minutes. Uncover and bake another 15 minutes. (at this point I usually baste them with the sauce in the bottom of the pan). After the 15 minutes pour them into a crock pot to keep warm while serving. They are simple and sooo good.
