I had tofu with some sort of peanut butter sauce on it and it was great. I'm looking for recipes similar to that. Nothing to difficult. Thank you for any help you may be able to offer.

It's not quite what your looking for. But its another way of thinking about using your Tofu.
Its one of my comfort meals!!

Ranchers Pie - Veggie version of cottage/shepards Pie.

Packet of Tofu - 250g or so. - Ideally smoked as it is tastier.
1 Tin of baked beans
Potatoes - 3-5 depends on how big your dish is.
1 Tin of sweet corn
1 onion - finely chopped
Tomato sauce.
1/2 tsp on chilli powder or a splash of tobasco.
cheese - chedar

Get the potatoes on the boil
Grate the tofu and chop the onion.
Fry the onion for 2 mins or till soft.
Add the tofu and fry for a further 2-3 mins.
Add small spoon of chilli powder or a splash of tobasco sauce and the tomato sauce
Add the baked beans and stir.

Now mash the potato, mix the sweet corn in.

Put all the tofu mix into an oven proof dish and spread the mash mix on top.
Grate cheese on top.

Bake in pre heated oven at gas mark 5 for 20 mins or untill brown on top.

Well it isnt a thai or asian recipe but it is one of my favs.

Cheesy Pasta Bake

Ingredients (use vegan versions):

1 box Mori Nu tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of vegan gourmet mozzarella
spices: parsley, basil, garlic
optional: cayenne

Directions:

Cook the spaghetti halfway. You don't want it to be mushy once you bake it.

While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.

Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.

Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.

Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.

Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.

Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.

Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.

It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.

Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.

Serves: 4

Preparation time: 30 minutes

I got this off www.vegweb.com they have tons of great tofu recipes...

Good luck and Enjoy!

I love tofu dishes. The best one which is real easy to prepare is, stir-frying tofu with garlic and use low-fat butter instead of oil.

Its simple and rather nice. So fry the garlic in the butter for a while and then toss the tofu in. And fry till tofu is golden brown and serve.

Put it in the blender or food processor with a teaspoon of sea salt, black pepper, 1 lb of spinach. Then stuff cooked pasta shells. place shells in a 13x9 pan with your favorite pasta sauce. Top with finely shreadded vegan mozzarella cheese (i prefer Vegan Gourmet) and bake @ 350 degrees for about 40 min. You are just baking to melt the cheese and heat the shells.

Woah, it tastes just like riccotta cheese-stuffed shells!

I prefer to have it cubed and fried till it's light brown on the outside, with some red pepper in the oil.
