Cru is the french word for raw.
So crudite is a platter of raw vegetables, usually served with a dip or dressing.
(most of us just call it a veggie & dip tray!)

I do believe crudite is French for fresh. It is a resh vegetable platter with ranch or some kind of salad dressing.

I am French so I know what “crudités” are in France. I do not know about fancy restaurants or caterers in others countries who try to make everything French expensive. In France, at least in Paris, where I am from, “crudités” is mostly used in the expression: “assiette de crudités”, which means a plate of vegetables, usually raw but sometimes cooked, but always cold, with a dressing, like “vinaigrette” (oil and vinegar…). I could be a salad made with shredded carrots or some mixed vegetables. When you order “une assiette de crudités”, you do not need to know exactly what it is, but you know it will be good vegetables, with a good dressing so you can eat this while you wait for the main course to be served to you. It’s better for your health than the “bread and butter” they serve in American restaurants.

It's actually crudites, plural, and pronounced crew-dee-TAY. It refers to raw vegetables served as an hors d'oeuvre -- carrots, celery, mushrooms, broccoli, cauliflower, etc.

Fancy name for a Veggie Platter..if your are paying for a catered event, don't let them charge you for for a fancy name..its just raw veggies and ranch.
