I would take something that is no fuss that doesn't need to be re-heated, as the host will likely have a full oven, as is. People have suggested pasta salads. I think that's a great idea, since they do not have to be re-heated to serve. You could also bring something like a jello salad, which is easy and people always seem to eat up. Green salads may wilt before you get there. Another option might be to bring something warm in a crock-pot, such as scalloped potatoes, glazed yams, or mac & cheese. If you make it in your own crock pot and bring it right to the pot luck, your host will not have to worry about finding space for it in the oven. You can find easy recipes at allrecipes.com to accomplish any of the above. Go with the recipes with the least amount of ingredients and the highest ratings! I'm sure they will be FAB!!

i use paula deens mac and cheese recipe they will love it,,,, always a hit when i make it
4 cups cooked elbow macaroni, drained
2 cups grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk
Preheat oven to 350 degrees F.
Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

Lots of good suggestions. How about something completely different? I would suggest vegetable soup, or vegetable-beef, slow cooked until it is almost as thick as gravy.
You didn't mention how many you are expected to serve, but if you know, then you might try french onion soup. It takes a bit more prep time, but is really worth it. Martha Stewart has an excellent recipe on her site which I saw her make a while back, and I recently tried it myself and it turned out way better than I expected

An easy side dish for me is mixing Kielbasa in a crock pot , mixed w/Cranberry Sauce..My aunt made it and I couldn't believe how good it was!
Another is the Baked beans w/Molasses, brown sugar, and throwing in those mini sausages -- easy and quick clean up..

I think everyone loves a nice pasta salad. Cook the pasta, the curly pasta works great. Add some nice diced carrots, black olives, diced tomatoes, a little red onion, some broccoli florets, and add italian dressing. It will be a hit. Enjoy.

Salads are always good. . .Or, you could make a vegetable casserole. There are lots of recipes for those, mostly with potatoes, or broccoli from what I've made personally. Try www.foodnetwork.com because Paula Deen makes a yummy broccoli casserole!

Bring a green salad and use waht ever you have in your fridge---you can never go wrong with a salad.If you want to take a side vegetable---take corn(everyone likes corn)
