I love this. Take fresh veggies and marinate them in italian dressing for about 2 hours then grill them on the barbeque.
Make a nice pasta, like penne and serve the veggies over the pasta. You could also saute garlic in olive oil and mix up the penne with that to give it a nice flavor. This meal is very inexpensive and very healthy. Good luck.

Here's a super-easy, quick, and cheap recipe I love. I think it's best freshly made (otherwise the beans soak up too much oil).
I tweak the ingredients and decrease the oil and increase the vinegar til they're equal, up the sugar, and the lemon... (I guess if you're one of those vegans who is strict about the way sugar is processed you won't be using any anyhoo.)
Tuscan White Bean Salad (from _The Can Opener Gourmet_ by Laura Karr)
2 tablespoons olive oil
2 teaspoons rice vinegar
1 teaspoon lemon juice
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/8 teaspoon sugar
One 15 oz. an Great Northern, cannellini, or small white beans, rinsed and drained
Whisk together the oil, vinegar, lemon juice, basil, garlic, and sugar. Empty the rinsed, drained beans into a serving bowl and drizzle with the olive oil mixture. Toss gently to coat.

Here is 1 of my dads award winning recipes! Its delicious!
2 teaspoons vegetable oil
1 cup quartered,sliced onions
1 cup red peppers or green peppers or yellow bell peppers, cut into strips
1 (15 ounce) can black beans or pinto beans or kidney beans, drained
1/2 cup whole kernel corn
1 (1 1/4 ounce) package fajita seasoning mix
1/3 cup water
1/4 cup chopped fresh cilantro or parsley
6 flour tortillas, warmed

Low Fat
Heat vegetable oil in large skillet over medium-high heat.
Add onion and bell pepper.
Cook.
Stir occasionally for 3-4 minutes or until vegetables are tender.
Stir in beans, corn, fajita seasoning mix and water.
Bring to a boil.
Reduce heat to low and cook, stirring occasionally, for 3-4 minutes or until mixture thickens.
Remove from heat.
Stir in cilantro.
Spoon 1/2 cup fajita mixture onto each tortilla and fold in half.

unless you live in a city or "hip" town it will be a lot of work to get the proper meals you need to stay healthy. do a lot of research on the vegan diet so you can have a strong argument for your parents and continue to develop naturally.

If you want to do super easy, get Zatarain's dirty rice mix, use ground beef crumbles (morningstar farms) instead of ground beef. we also throw in a can of crushed tomatoes just to add a little something. It's way easy and pretty cheap.
Also, Tofutti pizza's are pretty good - they're kinda hard to find, but they're good.

Alfalfa Tortilla Wrap:::
I like to warm a tortilla up --- pile on lots of alfalfa sprouts --- then sprinkle with dash and add homemade chunky fresh picante sauce... If you allow yourself dairy--add hot cheese or other... if not---a substitute... I was 14 years vegetarian but I still allowed myself dairy and tuna sometimes... It's alot easier than being total vegetarian... Especially converting...
