Ingredients

2 C small yellow onions, cut in eighths
2 C chopped, peeled, fresh, ripe tomatoes (about 1 lb)
2 C thinly sliced yellow and green squash (about 1 lb)
11/2 C cut fresh green beans (about 1/2 lb)
2/3 C water
2 Tbsp minced fresh parsley
1 clove garlic, minced
1/2 tsp chili powder
1/4 tsp salt
black pepper (to taste)
1 can (6 oz) tomato paste
1 lb uncooked spaghetti
1/2 C grated parmesan cheese
Directions

Combine first 10 ingredients in large saucepan; cook for 10 minutes, then stir in tomato paste. Cover and cook gently, 15 minutes, stirring occasionally until vegetables are tender.
Cook spaghetti in unsalted water according to package directions.
Spoon sauce over drained hot spaghetti and sprinkle parmesan cheese over top.
Yield: 9 servings--Serving Size: 1 cup spaghetti and 3/4 cup sauce with vegetables

Hey perfect question to ask me. i am also vegetarian. What i do is first boil the spaghetti with a little bit of salt. Then get a pan and put oil and cut onions and pepper until the onion is cooked. Then put some sauce in it. You can get is at any grocery store just make sure that it does not have any kind of nonveg things. Then after you added the sauce in the onion and peppers let it boil and then add cheese. After that take a look at the spaggetti if it is boiled drain it and then add it into the sauce. Sure, a good vegetable spaghetti is all in the sauce!!

Boil your spaghetti. Make your sauce as follows:

1) start with a good type of plain sauce (Prego is good)
Add bite sized carrots, broccoli pieces, tomato pieces. Also add button mushroom pieces if you have them. Slowly simmer the sauce for about 25-30 minutes, until the carrots are soft. (If the carrots are done, everything else will also be done)
Add parmeghian cheese to the top of the spaghetti. Enjoy!!

My personal favorite I gleaned from an article on Napoli in Smithsonian.

Pasta Fresca
1 cup golden onion chopped
2 cloves of garlic minced
1/4 cup parsley
2 cups chopped zucchini (or eggplant)
2 cups chopped seeded Roma tomatoes
3 tablespoons olive oil

In a large hot skillet add oil, onion, garlic until the onion is translucent lower the fire by half and add zucchini and tomato top with parsley cover and simmer 10-15 minutes. Serve warm over Linguine noodles. Enjoy!

Here is 1 of my dads award winning recipes! its delicious!

1 lb spaghetti
1 pinch salt
1 shallot, minced
1 garlic clove, crushed
1/4 cup red onions, diced
4 tablespoons extra virgin olive oil
1 (14 ounce) can diced tomatoes with basil and garlic, juice reserved

Spaghetti One-Dish Meal
Italian One-Dish Meal
Vegan One-Dish Meal
Comfort Food One-Dish Meal
Boil spaghetti, drain and set aside.
In spaghetti pot over medium-high heat, add olive oil, garlic and shallot, and red onion; cook until onions are translucent.
Add tomatoes and 1/2 can juice; cook until hot.
Add spaghetti and toss.
Serve with parmesan cheese if desired.

(Preheat oven to about 450 degrees, or preheat your broiler)
Get regular spaghetti and cook it al dente (with a bite) usually 8-9 minutes after bring water to boil and adding pasta...
you'll need red and yellow bell peppers (not the green ones) and some extra virgin olive oil (not lite, you must use extra virgin for the flavor)
Cut peppers in half (long ways), take out ribs and seeds (the ribs are the white parts once you open the pepper up)
put foil in a cookie sheet/jelly roll pan... place peppers on pan with the cut side down. Drizzle with olive oil... now you need FRESH cracked pepper, and some sea salt... sprinkle the salt on and load the cracked pepper onto the bell peppers It shoudl stick with enough olive oil on them.
Slide tray of peppers into your boiler, or into your super-hot oven... if you are using a regular oven, and not the broiler, leave the door cracked, and keep the light on, you'll need to check it often.
once the peppers are black on top, pull out the trays and put peppers in a plastic bag (this will get the roasted flaky/dry skin off)
let those sit a minute and start the sauce...
I just use a regular jarred sauce from the grocery store, no sense in making more work for myself haha.
I use Ragu Sundried tomatoe and Sweet Basil (you gotta get a suace that's got a bit of a sweet taste to it)
If you can't find it find something else with the sweet taste.
pull peppers out of bag and cut into strips.
Fill a pasta bowl with the al dente spaghetti... drizzle with olive oil then crack some black pepper over it, toss... lay strips of roasted bell peppers over pasta. cover with heated sauce. salt and pepper to taste and serve!


and that is totally out of order, but thats the gist of it :)

I've found that getting some seitan and grinding it up a bit or even breaking up some Boca Burgers and then frying them with a bit of onion and some seasoning, then adding them to regular marinara sauce is a nice alternative vegetarian "meat" sauce with a nice texture and flavor to it and it adds protein to the dish.

Tomato pasta sauce with peppers, courgettes, mushrooms sweet potato and red onion all in big chunks, any other veg you feel like putting in is good, steam the vegetables first then simmer them in the sauce or put in oven proof dish and pour sauce over and bake in oven goes great with spagetti and for non vegetarians you can just put meatballs on top while serving

Something very yummy is: cook up some pasta and then add a little olive oil, some minced garlic, FRESH Parmesan cheese, and some FRESH diced tomatoes. It is absolutely delicious! Good Luck!

I like using a little chillie in olive oil, add some diced peppers and then some paneer (indian cheese) or Tofu (vegan option) then kidney beans and then blend a tin of tomatoes and add in. After that add a little dried small size soya mincemeat (i like the dark kind you get in health food stores) then add a little water and simmer with Italian spices.

serve on spagetti with dried vegan parmesan (the kind you get can get in Tesco and most stores in a shaker sorry forgot the name!! :-( )
