Hello, as a few others have stated boil or toast the tomatoes & jalapeno's first.
Our family loves salsa & we make all kinds everyday. Here's a simple recipe
5 Roma tomatoes
1-2 jalapenos (depending on how hot you like it)
Garlic (1-2 cloves, depending on taste)
Onion (yellow or white diced, about a tablespoon)
Cilantro (washed & coursely chopped)
Salt
Blender or food processor (both work just as well)
Boil the tomatos & jalapeno's until tender (about 10 min). Meanwhile chop anything that needs chopped.
After boiling cut the stem/top off the jalapeno.
Add the tomatoes (use a spoon to transfer) & jalapeno's to blender. (Add a spoonful or so of the liquid from boiling the tomatoes & jalapenos as needed throughout the recipe) Add garlic, onion & salt. Blend at lowest speed for abot 30 sec. Stop, stir to get the clumps of tomatoes loosened from bottom. Add cilantro (salt again if needed) and blend again for about 30 sec or until you like the consistency.
ENJOY!

Blending anything always make a liquid. Use Plum tomatoes and do not use a machine. Dicing is always easier and you can keep all of the liquid and taste in the tomato.

the way i do it is, i cook the tomatoes( it doesnt matter what kind u use) then after they are cook i put some of the water they were cooked with and put the tomatoes and water in the blender add whatever ur gonna use to give it its flavor (i usually put salt, cilantro, garlic, hint of pepper, to add the spice i add a jalapeno which i cook with the tomatoes) then i blend it all together, and that should do the trick!!
good luck

Its better if you want to make salsa buy canned whole tomatoes and blend them not too long, just a quick blend or boil the tomatoes yourself.Chop peppers, cilantro, onions (if you want), and add them( do not blend that). Add some chili powder, paprika, salt and crushed red pepper and pepper. Mix all together, it tastes really good especially when it is cold. Enjoy!

BOIL THE TOMATOES FIRST UNTIL TENDER ALONG WITH THE CHILES!! THEN,,,BLEND UNTIL SMOOTH.you can also roast the tomatoes, they taste better that way.also, add some chopped onion, cilantro and a little fresh garlic to the blender as well.then, you can add some chopped avocado (if you like)to the salsa when its done

you can use a blender, and its white because of the bubbles, but if you blend it up and add some oil to a sauce pan and fry the salsa..it should turn it into a nice red brown color and it makes your salsa taste better too.

You need to dice or pulse very quickly and for a very short time. Tomatoes - all types are over 95% water.
The dicing is so much better.

try roma tomatoes and don't put them in the blender, use a food processor and pulse until you get the size you like.

If you are going to blend tomatoes, its best if they are cooked, the white colour you describe is more like little bubbles caused by the acid in the tomatoes - I think....
