Do you like mushrooms.. they are good protein!
how about herbs, onions, cucumbers, jalepenos, garlic! Fruit is much more important than vegetables..Apples, Papaya, Peaches Pineapple, Pumpkin, Oranges, Tomatos, Eat at least 3 fruits a day and 1 veggy to be healthy
the veggy I recommend is Beets.. red loaded with iron.. the one veggy that's closet to meat
nutrients. Eat plenty of Orange and Red fruits
& Veggies. A few dark greens are good too!
for veganism you can replace regular milk with soya milk or rice milk or coconut milk! For frying use sunflower oil or corn oil!

Umm... tofu? That's not a veggie. Potato and pasta dishes are relatively easy to eat, though not the healthiest.
But trust me, once you go vegan you start becoming very open to vegetables. I've always hated eating vegetables but when it's a choice between eating that and nothing well... Vegetables and fresh herbs are now delicious to me. ^__^ (Especially when paired with the good feeling of not eating animal products.)

If you don't like vegetables, then you might want to venture into a vegan diet slowly... maybe ovo-lacto vegetarian first.
Otherwise, you will be bored and discouraged, unless you have fantastic willpower.
I've been a lacto vegetarian for a while now, with a goal to go vegan (diet) by March 2007.
I really didn't like vegetables either at first... Still can't eat a salad though... (yuck).... but, it gets easier.

Do you not eat veggies 'cause steamed veggies taste bland? I don't care for steamed veggies, they lack character.
Instead, try roasting your veggies in the oven with some evoo (extra virgin olive oil), salt and pepper. (balsamic vinegar is good, but optional) TRUST ME, they taste a whole lot better roasted than steamed. They're down right GOOOOOD! Try roasting carrots, green beans, broccoli, cauliflower, zuccini, Brussel sprouts - yes, Brussel sprouts. They oftentimes taste nasty to many, but trust me on this one, when they're oven roasted, mmmmmmmmmmm!!!!! : ^ 9
Don't oven roast leafy greens, they'll turn into flaky chips and 1) won't be worth anything nutritionally, and 2) won't fill you up unless you eat volumes. Do sautee them in evoo with some chopped garlic, salt, pepper, and any herbs/spices you like. Try a pinch of red pepper flakes and onion, or some basil & oregano, or cilantro and corn with tomato sauce, the possibilities are almost endless.
