Chicken Tikka Masala. The Masala is the sauce. What makes the difference between the restaurant Tikka, is the fact that the restaurant will

1. Marinade the chicken in spices

2. Cook the chicken in a tandoor (clay oven)

You can grill chicken and then approximate to the tandoor effect by using a flame-gun on the chicken. I've done this with straight chicken tikka with some success, but it is a very skilled job, and I'm a chef.

I feel you might be better off going to the restaurant, or ordering a take-away. Do you know the secret for onions in Indian cooking?
(hint - smell them)

You are probably using raw chicken? To make "restaurant" tasting Tikka Masala, you need 'left-over' tandoori chicken, and not too many folks have a tandoor at home!

you must marinate the chicken over night and you must grill chicken first, before eventually adding to sauce. try looking up the recipe
