I am cooking a tur-duc-hen and my oven has options for both convection and conventional baking methods. Convection holds more moisture, but I've read that if I am using a deep pan, the convection option is inefficient.

I would use neither. That poor turkey probably led a very short life filled with abuse and suffering prior to being slaughtered. She has been beaten, stepped on, thrown into a cage on the truck and witnessed her companions die in front of her at the slaughterhouse. I wouldnt cook her at all. Instead I would say a little prayer and bury her. With the upcoming New Year, you can do something great for yourself, the environment and the animals by vowing never again to buy or eat an animal carcass.

Whether you use the convection option or not, you should give as much surface area to roast as possible, anyway. I use a jelly roll pan to roast everything- basically a lipped cookie sheet.

Just be aware using the convection will probably take a good half hour off your cooking time.

I would stick to the conventional way for now. Then, during the year, experiement with chicken to see how you like the way the convection cooks it. Good luck!

I always use my convection. moist inside crispy outside.
