Merry Christmas to you too. Vegetables will start losing goodness from the moment they're picked, so by preparing them today you are not going to notice much difference. If you store them in water you are going to lose a lot of goodness, best to prepare, wash and drain and keep them in a container in the fridge or freezer. I've already done my sprouts, broccoli and carrots. That just leaves the potatoes which go black and yucky if peeled and left, but I will cook extra tonight so that I only have to pop them in to roast tomorrow.

If you prepare vegetables and then put them in water, all of the nutrients, vitamins etc seep into the water and disappear.

If you don't soak them in water but store them in air-tight containers and chill then they should be fine protected from air and light. If you have zip bags or those clips that you can use to seal bags then they're great - just remember to remove all the air inside the bag as you seal. Of course, this solution does depend on having space in your fridge which is always a problem for me!

Im prepping mine tonight and covering on cold water before I steam them tomorrow afternoon.

The taste wont be effected nor will the texture. They will still contain loads of fibre and most of their vitamins.

Yes I will lose a little of the Vitamin C content but I figure that on this one day that wont matter too much.

I'm planning on drinking plenty of fresh orange juice with my champagne in the morning, some watercress with my lobster starter and maybe a couple of satsumas with supper so I think my body will handle it on this occasion!

There is enough to do on Xmas morning without adding chopping and peeling into the equation!

Vegetables begin to loose their nutrients as soon as they are picked from the garden. The longer they sit around before being eaten, the less nutritious they are.

If you peel or cut them up, you are speeding up the deterioration of the veggies. If you are soaking them in water for any period of time, the vitamins are leeching out of the veggies and into the water.

yup and when u reheat em they lose more nutrients! by the way WHEN U BOIL A VEGETABLE IT LOSES 50% OF THE NUTRIENTS WHEN U MICROWAVE THEM THEY LOSE ABOUT 95% OF NUTRIENTS!! SO U SHOULD ALWAYS STEAM THEM I STEAM ALL MY VEGGIES AND THEY TASTE SOOOO MUCH BETTER!!! INVEST IN A LITTLE INEXSPENSIVE STEAMER BASKET AND TASTE THE DIFFERENCE! HAPPY HOLIDAYS!
