Breakfast: muesli and plain yogurt or a smoothie with frozen fruit and yogurt
Lunch: I usually make big batches of soup and freeze them in little containers so they're easy to eat. And not just wimpy vegetable soup, good hearty soup with lots of beans. I really enjoy sandwiches with the Yves veggie meats too (the salami is the best)
Dinner: Chili, curries, stirfries,
I cook alot with TVP (texturized vegetable protien) - it's much easier to use than tofu and much cheaper. You can buy it in dry chunks or slices from bulk stores and you reconstitute it with hot water. It absorbs sauce better than tofu. Most veggie "meats" are made of TVP. It's great in chili or curries.
Also a great product is the deep fried tofu puffs, they can be added to stir-frys without being marinated like other tofus. They absorb the sauce really well, they're like little tofu pillows.
The key to being a successful vegetarian is making large amounts of food and freezing it for later....then you don't have to worry about prep all the time and you won't resort to expensive easy meals....not every day at least.

I'm big on plentiful salads filled to the top with a variety of leaves and veggies. Beans, whole wheat pasta, or brown rice add some protien and texture. Nuts and fruit as well. Then there's oatmeal or another hot cereal, or cold cereal with rice milk for breakfast. Dinner is usually more thought out cause hubby eats meat. So I'll make a whole grain dish that is my daughter's and my main dish, but hubby's side. Then 2-3 different vegetables. And if I don't feel like cooking one of a few fast food joints (Chipotle, Subway, Chinese) hits the spot!

Lunch: MorningStar Farms Philly Cheese Steak Burger on a wheat roll.
Dinner: Amy's Organic Broccoli Pot Pie with Cheddar Cheese Sauce. My cousin got me hooked on 'em.
Same thing...every day. It's good stuff.
Sometimes, late at night, if I'm hungry I'll make a peanut butter and marshmallow quesadilla. It's really tasty.

snack=nuts(all kinds)
lunch=beans and rice
snack=raw veggies and fruits
dinner=I cook whatever,I am more complicated when I cook my dinners,I like to keep my other meals simple but I eat alot of different things for dinner
snack=fruit juice

if i feel like cooking i make vegan burgers with garlic and grilled onions and veggie cheese.or pasta with artichokes and olives and parmesan cheese(fresh)always eat steamed or sauteed vegggies,dark green as i do not drink milk,YUCK!!! or if i don't cook i just eat apples,veggie slices,genisoy bar,carrot sticks baked lays, or whatever, if i remember to eat anything. i love garbanzo beans(hummus)yes!!! brown rice!!! that's all i can remember right now gotta go to the store...and i am mixed race to answer your question.(american)

I usually go to fast food places and get things that don't have meat and almost always I can get them to make something without the meat.

i'm white and this is what i normally eat:
peanutbutter covered toast, soy milk, or even oatmeal.
beans, or whatever i can find full of nutrients
what ever momma cooks take away the meat
