I am interested mostly in domestic (US) and flights between the US & Europe. I am also interested the why you think the food is good, not just the airlines name.

Continental Airlines has the most AMAZING vegetarian/vegan meal options. My mother flew to Hawaii on continental and ordered the vegetarian meal- all the non-vegs around her were so jealous!

You mean which airline has vaguely edible vegan meals? I don't know of any in the U.S but for transatlantic flights I would vote for British Airways. Lufthansa provides a good Indian style vegan main course but the second lighter meal is a totally inedible cucumber rye sandwich.

Trust me, the airlines don't care about whether you want to eat meat or not. They'll charge you way too much for a sandwich and make you pick off the yucky parts.
