And what sausage meat would be best to stuff the bird!

how much chicken would a person in your area (or persons you invite) eat? 1/4? 1/2?
If they eat 1/4 chicken, you'll need 5.
If they eat 1/2 chicken, you'll need 10.
That's rather easy.
Some more minced chicken would be good... but pork is also good.

You will definately need several chickens. Figure on at least 1/4 bird per person (a healthy portion) which would mean at least 5 chickens (this is if no one is looking for seconds). For roasting, you should look for the size marketed either as "roaster" or "broiler/fryer". Another option is to make individual cornish game hens (1 per person).

I would go with a mild sausage for stuffing so that it doesn't overpower the flavor of the chicken. A sweet italian should work fine, and you can get it made with turkey meat as well as the pork variety. Brown the meat and mix it with whatever bread you are using (I prefer cornbread), and maybe some diced apple and sauteed onion. To save yourself the headache of stuffing the chickens, you can prepare the stuffing in a baking dish and cook it seperately. This is my preferred way because I get a better texture in the stuffing (like that nice crispy top) and the birds cook more evenly.

well if you are going to feed 20 ppl you may need 2birds otherwise I'd suggest a 20-25 lbs turkey. as for the meat to stuff it with thats beyond me I've never stuffed a bird

At least a few chkns. Smaller ones have less fat. Most people stuff w/suffing breads & loose sweet Italian ssg.
