Being a former chef and worked in Jamaica, they have alot of road side stands called Jerk Huts, they sell chicken, pork, sausage and some sell a fish dish.

They serve it on a bread called Hardo, and slather it with a hot sauce made with scotch bonnet peppers, onions, salt, thyme and vinegar.

They marinate it in a mix of onions, garlic, allspice (known as pimento in Jamaica), nutmeg, scotch bonnet peppers, oil and black pepper, the don't not use brown sugar as the cooking process is done over pits in old oil drums and cover with corragated iron panels to cook and smoke.

The taste can varie depending on the person cooking it, it is smoky and complex, with overtones of spices and crunchy, you wash it down with either a tradtional ginger beer or the Jamaican National Beer "Red Stripe", it is eaten on site and the grease runs down you fingers that is why they give you the bread to soak up the juices.
