coconut I saw it on a health lecture

Save olive for the end. DOn't cook with it. Olive oil has many goo nutrients used for other things, don't burn it away! eat it raw

I find that qualtiy olive oil and coconut butter/oil is best. They can take very high heat and do not degenerate (much) with heat. They can also be kept at room temperature, as most oils are highly unstable and need to be kept in the fridge.

I find that sesame seed oil really doesn't digest very well at all after cooked although it smells and tastes great.

Flax oil, it's just too expensive to cook with and most of the good properties in it will be destroyed by heat, as with most oils.

Most seed oils sunflower, sesame, canola, etc. all get hot very quickly and I don't like to use those for that reason since I usually use a wok for cooking and on high heat for a quick stir-fry. At lower temperatures, or for baking etc., other oils may suffice. Just make certain they are good quality, organic if possible, and in a container that will not let light pass through (tinted glass, tin can, or with Omega brand oils - dark 'special' plastic). All other 'regular' vegetable oils, forget it. Only good for your bicycle chain. For olive oil, I go for the large tin can of extra virgin from Italy or Greece.

I put some in a dark glass wine bottle with one of those little cork and metal spout plugs that bars use for booze. Works great for oil; no more spilling too much and I'm not oxidizing a whole contianer at once each time I need oil (don't use the plastic ones; plastic mixes with oil).

Olive oil is the best. The next best is Canola (rapeseed oil from Canada).

DON'T use synthetic oils like Enova. Go to their website and learn how the oil is actually absorbed. Then research the net for published medical papers on how the body processes DAG and TAG fats. You won't want to touch Enova.

I think is Canola oil? But I use olive oil in ALL my cooking and some salad dressings.

I've also heard canola is good. Flax seed oil would be good as well, but I don't know how high of temperatures it can withstand. Anyone?
