steaming is the best way to preserve all of the vitamins

If you are using a steamer insert for your pots and pans...you load the vege into the top the part with the holes in it and put that over the pot with the water. The salt in the water is to make it boil more rapidly. And in that case should not make much of a difference. If it is telling you to add the salt to the vege...well, it is probably for taste. Personally, I do not put salt on my veggies when steaming them...I simply salt to taste after they are done. You can also purchase an appliance that is a Vegetable and Rice steamer...you won't have to use salt in it but, watch out the steam is very concentrated and can burn easily. Otherwise, I don.t know of any other way to steam vegetables unless they are having you simply put the vegetables in a mesh strainer or colander and putting that over the pot of water.

If you don't peel a veg it keeps its nutrients. Baked potato has more nutrients then a boiled potato. Carrots cooked in a low amount of water will retain its nutrients. Look into waterless cookware. It lasts forever and you can use very little water because the lids seal as soon as it starts to boil.

Steaming til they're tender crisp. Other than eating them raw, or juicing them, this method of cooking retains the most nutrients.
