Take him out to dinner or lunch at a reasonably good restaurant soon, get to talk about the decorations, lighting, etc. there, discuss a few of the menu items before ordering them (if you dont know already what his likes and dislikes are). You can then get some idea on what to do for the new year eve. (Be discreet in your enquiries!)

Well do you some of his favorite dishes? For starters will want to start off with some shrimp cocktails and the sauce having the light dimed just a little with candles lit every where. your dinner will start with a chef salad with the dressing of his choice a nice big steak, baked potato with butter the works if he like that way just have other part to the side broccoli with cheese on the side and for desert have a nice lemon pie with whip cream and as you serve him his desert serve it in your nice lingerie for the night

Music: Something slow and romantic, kinda depends on what type of music you both like...
Light: Candles, bunches of them!
Temp: Keep it cool, like 65 degree, the candles will put out some heat as well as you and...err umm nevermind... :0)
Keep the convo light, nothing deep... Dress to kill, but, not something way out of the ordinary... Make sure to have something sexy on underneath :0) *wink*

the best is to make it simple but elegant!
candlelights and soft music will set the mood for the rest of the evening
lay your table with a white tablecloth and an organza overlay, finest crockery you possess with silverware appropriate to dishes which will be served!
1. a nice butternut soup ( very simple to make) with crusty bread
2. roast lamb with pepper sauce
oven grilled mix of veggies sprinkled with chilli spice
sweet yellow rice
3. dessert - ovenbaked lemon pudding
obviously depending which part of the world you are and the season you are in, but the above idea would go with winter.

well what would be incredibly adorable...buy his fav champagne, or w/e....get a pretty white table cloth...candles..make him pasta-by hand-it means a lot more that way, and its relatively easy..either that or make tortellini's and alfredo sauce- get warm bread...and put on some of his fav softer music...if he doesn't like mellow music then put on something like the chilly peppers "snow" in the background...hope that helps..ohoh and for dessert apple pie w/ vanilla ice cream is always good ;)
