I really like this gentleman, he's mature nice, caring and very polite. He's 7 years older than, is he too old for me?
Despite of the age difference I feel we have so much in common!

Well as you haven't told your age this is a if/then statement.
IF you are 25 or older then it doesn't matter age is just a number
I say this because if you are 15 and he's 22 THEN he's breaking the law and could be doing 20 years in prison
If you are 21 and he is 28 THEN I'd tell you to not even THINK of taking it seriously even if you want to until you are 25. WHY do you ask? Because mentally, emotionally and maturity wise your most extreme and drastic changes will occur UNTIL you are 25. Before then you are just sampling the world and to try to hold you to one thing would stunt your growth in some ways. You are still learning and growing. At around 25 you have better idea about yourself a clearer understanding of certain things and a attain a certain level of stablity and maturity.
You could completely change as a person before 25. So the answer to your question is: if you are in a relationship and want it to REALLY last don't really let the relationship get serious till the youngest of the couple is 25. Otherwise it's a heartbreak in the making. Because you'll say all of these things, evolve into a different person and leave. And the person who believed what you said will be left to pick up the pieces. Then when you get to that age and realize what you did because you've got the maturity... well then you'll really realize what you did and that can be a tough pill to swallow.

my fiace is 34 and I'm 19. We have everything in common, and I hardly ever remember he's so much older. I don't think age matters, just levels of maturaty

My girlfriend is also 7 years younger than me, and he had been along for almost 4 years...
