While you do want some cushioning to protect your spine during certain exercises like rolling like a ball, too much cushioning will compromise your form. You want to be able to maintain your spinal alignment throughout all of the exercises, which is difficult to do when your back (or front) is sinking into a soft mattress.
Many Pilates mats are about 1/4" thick, although some studios use a thicker but firm mat that's several inches thick. You can achieve a similar effect by stacking up a couple of yoga mats or even lining your workout space with a couple of thick blankets (particularly wool ones).

The bed might be unstable and hard to keep your balance. Might prevent you from doing the moves correctly.

NO, you need a firm ground for support.
BED is for sleeping only otherwise you will find it difficult to sleep.
