Rabbit is a traditionally Maltese dish, but I'm afraid I don't have an authentic Maltese recipe, sorry. I go to Malta a lot, and rabbit featured regularly on the hotel menus back in the 1980s. Not so much these days.

Half-maltese, I live in the kitchen whenever I got back to see family.

There are a few national dishes:

Octopus Stew is a popular one although, not recommended for chome cooking.

Rabbit is a big deal. They serve a 2 course meal of it, first a rabbit in tomato ragu with basil. That's serves over pasta. It is then followed by a different sort of stew (still based around rabbit and tomato), this tents to be serves with fresh veg and bread. I find green beans work well.

There are also small pasty-esque treats (pastizzi) made with puff pasty. Fillings are commonly a bolognese sauce with minced beef and peas or ricotta. These are then deep fried. Unhealthy but VERY yummy!

Timpana (Baked Macaroni)

1.5 lb. short pastry
1.5 lb. macaroni
1 lb. minced meat
6 oz. peeled tomatoes
4 oz. chopped onion
2 oz. grated cheese
2 oz. tomato paste
1/4 pt. water
2 hard boiled eggs
4 eggs
clove of garlic
olive oil
salt and pepper


Fry the onion and garlic. Add the meat and, fry till it is cooked. Add the tomatoes and the tomato paste. Cook for a few seconds. Slowly add the water and simmer till the meat is tender. Boil the macaroni, drain and cool. Chop the hard boiled eggs. Mix everything and season. Roll the pastry into a greased dish. Pour the mixture and cover with the pastry. Brush the top with egg wash. Cook in a moderate to hot oven,

i live in malta now, so have come across a few great meals.
Rabbit stew is probably the national dish, usually served over spaghetti. Baked macaroni (made with a thick bolognese sauce) and covered with a pastry and baked in the oven (this is great)
Minestra (every vegetable you can imagine cooked till done) its served as a soup and its so healthy and delicious, octopus stew, or squid stew, fish soup, or baked, fried, grilled or steamed fresh fish. Hope this helps

take a chicken. cut it into pieces and wash. add washed mint leaves, 3 spoonfuls of vinegar, 5 cups sugar and a litlle salt. Add onions and some fresh plucked green vegetables. Mix it well. Put it in water, and bring to boil. Add milk and pasta. Heat it well. Serve hot before serve with green chilli sauce.

im maltese and really there isnt alot of foods that we can call our own.....
pastizzi - which are pastries with ricotta spinach and egg in them....
and the other foods are heavy soups with a stack of vegetables (brodu)
other meals are pasta based....heaps of bread
i dont have the recipes im sorry as my mum is the cook and i never really paid much attention
