I'm not sure what chocolate ground is but if its pieces like chips then why not. You probably are better off to do so because you can then either make your oun with a high quality chocolate (I like to use chocolate with 64% cocoa solids) or at last have a larger range of brands to chooses from. If the "chocolate ground" is like cocoa powder then a substitution would be fine but the out come quite different. Your pastry would then be chocolate and not "garnished with" chocolate.

YOU CAN TRY CHOCOLATE GROUND. I HAVE HEARD THAT IT CONTAINS A LOT OF MINERALS. HA HA
