if an Egg is not an Egg, then it would'nt have been known as an Egg. Since it is known as an Egg, more than 1 Egg is Eggs, So, Yes! Eggs are Eggs.

The original saying was mathematical in origin and was.....as sure as X is X...this has now been corrupted in eggs is eggs..so no eggs is not eggs but X

That depends on what kinda eggs you are referring to but generally eggs are eggs otherwise you wouldn't call them eggs. You've actually answered your own question by asking if eggs are eggs because you already referred to them as eggs.
