I'm married to a wonderful Chinese woman. Not an American born Chinese. My wife was born and raised in Beijing and didn't come to America until her late 30's. The point of my introduction is this:

You say you are doing a "Chinese Diner." Are the guests Americans or Amewrican born Chinese, (who probably would expect American made Chinese food) or are the guests Asian born who might expect authentic Chinese dishes????

Either answer, but particularly the latter one cean become a little complicated. PLease feel free to e-mail me as I have experience with noth American-Chinese food and authentic Chinese food.
