I often eat shrimps with this red sauce at Las Vegas buffets. Sometimes the back of the shrimps are cut. There is no black stuff and it is easier to peel the shrimps. When they are not cut, there is like a black stripe. It is liquid and has no taste. Can you eat this? What is this black stuff? Is it shrimp poop?

The black is the vein, when a shrimp is cleaned the shell is split and that vein is removed.

When a shrimp is sold with just the head removed the shell and vein stay in place.

It is NOT poop or the intestine.

It is a vein, and it does no harm to eat it, just looks ugly. You can devein them by cutting (very shallow cut) along the back and rinsing it out.

that is the stuffing in their little gut and anus extending from their little mouths. the black stuff is just what you should expect shrimp poo. another shrimp my dear. a big one?

Yes. It's the waste of the shrimp. I don't think it's harmful, gross, but not harmful.
