Carrot Cake
"I've tried many carrot cakes, and this is my favorite recipe. If you don't like pecans, feel free to leave them out." Original recipe yield: 1 - 9x13 inch cake.
INGREDIENTS:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

Ingredients:-
-1-1/2 cup flour (shifted)
-2 tsp ground cinnomon
-1-1/2 tsp baking soda
-1 tsp nutmeg (optional)
-1/2 tsp salt
-3 cups grated carrot
-1-1/2 cup sugar
-1 cup oil
-1 cup chopped walnuts (also use almonds or cashew too)
-3 eggs beaten.
Method:-
1) Sift together flour, cinnomon, soda, nutmeg, salt.
2) Combine carrots, sugar, oil, nuts & eggs and blend.
3) Add dry ingredients to the egg mixture & pour into 10" pan.
4) Cook on high power in microwave for 10-11 min.
5) If you feel the cake is unevenly cooking, keep changing the position of the pan.
6) When done, the cake will pull away from the edges of the pan.

2 CUPS GRATED CARROTS
dump every thing a bowl at once
dump in a big bowl
stir well
in a 9x12 pan
bake at 350 for 1 1/2 hour
buy your own cream cheese icing

CARROT CAKE

3/4 cup buttermilk
3/4 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups all-purpose flour
2 teaspoons baking soda
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple with juice
1 cup raisins
Preheat oven to 350 degrees. Grease and flour an 8x12 inch pan.
In a medium bowl, sift together flour, baking soda, salt and cinnamon. Set aside.
In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well.
In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins.
Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well.
Pour into prepared 8x12 inch pan, and bake at 350 degrees for 1 hour. Check with toothpick.
Allow to cool for at least 20 minutes before serving.
