Get yourself one of those little toaster ovens. They are a lifesaver for quick and easy one person cooking kind of meals. You can do any kind of fish in there...salmon, cod, etc....in no time flat. Just sprinkle with a little lemon pepper and a dab of butter. And if you cover the dish that comes with it in tinfoil, you literally just throw the foil away so there's no mess to clean up. I've also done 'chicken and vegetables' in there using fresh...not frozen and breaded...chicken strips and pre-cleaned vegetables you can get in the bag at the grocery store. Again, using the foil liner, just layer the chicken and veggies evenly and cover with a light terriyaki sauce. While it's cooking...maybe 15-20 minutes, you can do a boil-in-the-bag rice on the stove. How easy is that?? Hope this helps!!

Its hard to come home after a long day and make a healthy meal when you are tired. One thing that I used to do is on a day off, I would make a number of good meals and freeze them in portions using the seal a meal bags. Its works well and is quick and easy to heat up.
Also, any time you cook, make extra portions to put up for a day when you dont want to cook.
I could write pages of easy recipes, but I suggest you go to recipezarr.com. It is a great site, full of all kinds of recipes from people like you, and from all manner of cooking types. I think it will help you alot. Good luck, and good for you for wanting to stay with a healthy menu...

A stocked cupboard will help a lot. Based of the rule 1part meat + 2 parts vegetables + 2 parts carbs + sauce, I have satisfied ( often amazed) myself when I want something like around, 2am, fast.
Meat could be anything, chicken, fish or whatever you like or maybe even leftovers. If, by chance you cant find them, thats ok. you wont miss them a lot in this method.
You could go crazy over the vegetables. Chinese cabbage is a personal favorite, since it stocks well and looks appetizing cooked. Carrots, corn, if you like it and you have it give it a go.
Carbs will be cooked rice, beans, couscous, pasta or potatoes. If you feel like bread, by all means go, no one's stopping you.
Chuck em all in a skillet with the sauce. The sauce may be whatever bottled you fancy, hoisin, honey mustard, barbecue etc. I have been personally saved by oyster sauce, chopped egg and rice alone.
Heat for some moments, mixing a couple of times. Pepper if you like, salt if you need it. Then serve hot. This is a one bowl meal that is a cinch especially if the ingredients can be cooked in a flash (like corn and shrimp) or cooked beforehand (like rice, potatoes left in the oven, leftovers).
Using egg noodles, hoisin and maybe a little sesame oil, you can even rival your take-out.

I like making a raw tomato sauce and serving it over a stuffed pasta (eg tortellini) or angel hair pasta. Serve with whole grain garlic bread and a green salad (you can add tofu, cheese, nuts, grilled chicken, or smoked salmon for protein).
To make the sauce buy and dice the best tomatoes you can find, add extra virgin olive oil, fresh ground black pepper, salt and Italian spices to taste. Make the sauce just a tiny bit saltier than you normally would because the taste will be diluted when you put it over your pasta. I'll bet you can find a recipe on the web for this to give you the exact portions of ingredients.
Cook pasta and pour tomato sauce over pasta while it is still hot and serve with garlic bread and salad.
Garlic bread is really easy to make and can be put in the oven before you chop the tomatoes or made at an earlier time and refrigerated. Cook the pasta while you prepare the tomatoes. Buy a ready made green salad from the supermarket. Add pre-chopped raw veggies and/or protein source.
Sometimes I go to places that have great buffets and just get their grilled or smoked meats to add to salads later. Then I don't have to make them myself. Enjoy!

Minestrone soup does not take much to prepare if you just incorporate 1 potato, 1 carrot, half onion and a stem of celery with a handful of split lentils (which do not require any soaking). The soup though tastes better if made the day before. Also, fish does not take long to prepare - and it is normally quicker if you pan fry it. It can be served with a bowl of potato salad and some greens.

Get a crock-pot and prepare the meal in the morning. It'll cook all day while you're at work and be ready when you come home.
You can make all sorts of healthy meals too.

Grilled cheese, tomato soup, BAM ya there !
Spaghetti: flash some garlic, and olive oil in a frying pan (don't over cook, not brown), throw it over some spaghetti and Broccoli, fresh ground pepper and some "Locatelli Ramano cheese", and BAM, Ya there !
I like to make a huge amt of meatballs on Sun, then I can get two or three meals out of them all week, they taste better that longer they sit in sauce. Bam !

Start with 2 bowls. Divide a can of cream of mushroom soup into each bowl. Divide a 16 oz. container of sour cream into each bowl. Add 1 1/2 teaspoon taco seasoning to each bowl. Put 1 cup shredded cheese into each bowl. Mix each and set one bowl aside for use later. In the other bowl mix in 2 cups cooked chicken or turkey, 1 cup onions, 1/2 cup salsa. Mix well. Roll mixture in tortillas like a burrito and place in a baking dish seam side down. Cover with mixture in remaining bowl. Cook in preheated 350* oven until bubbly. Takes about 10 minutes to prepare and roughly 30-45 minutes to heat through.

try toasting sandwich bread. and making a tuna melt. slap on a cheese slice and stick it in the microwave for 5 secs. then smother on the tuna mixture and presto you just made a tunamelt. They are delicious and hot. Eat with a few chips and have yourself a quick meal.

bake some chicken in the oven, go to walmart and get brocolli, rice, and cheese in a box, and get some crossants already made and put them in the ovening, and there you have a healthy and quick meal.
